For myself to refer to and look back on - 6 lemons (1/4 inch or 0,625 cm slices) - 2 cups sugar (450ml?) - Water to cover lemon Time: 22min > 8hrs > 20min > 3.5hrs 1. Boil under medium flame for 2 mins 2. Simmer for 20 mins under reduced flame 3. Soak 6-8 hours 4. Drain off liquid for 20mins or so (blot w paper towel to speed up) 5. Lay out on pan w/ rack & baking paper 6. Oven at 51degrees for 3.5 hours 7. (optional) Coat in sugar
