Crazy thing to consider is that humanity fought and won aginst the men of iron. Gravity based weapons were the norm and STC fabricators were something you sent out with colonists to make their lives easier. Humanity also understood genecraft to a level that makes the custodes look inferior.

If you look at pocket empires like Interex then you can notice that humanity from TGOT didn't care about physical appearance and were on a way of self evolution because their warriors were built, if i remember correctly, like some armored centaurs or something

Custodians are symbols on as well as companions for an even more superior being, and we know they're crazy expensive and time consuming to make. I doubt that despite all the glory of dark age tech humanity could or would raise the standard that high for their general population, though I'm sure given a reason they could replicate or enhance a custodian. Like you said, they opted to make AI the solution to many problems, which is very likely the better choice under ideal circumstances. Frankly, I like to think that DAOT's Human Federation was so absurdly advanced, all of Humanity after the Age of Struggle would look like techno-barbarians straight out of Mad Max by comparison. -Their void ships had gravitational weaponry so powerful that even the Eldar ships had no way of escaping. -Men of Iron, like the Excindio Battle Automata, were surely just mass-produced basic infantry, but by Imperium standards they were one-man armies that could take on entire armies of Daemons and Mechanicum and win. -Terminator armor, which is considered the best armor in the Imperium, was just civilian suits used for asteroid mining. -Astartes, and even Custodes would seem like school models compared to the genetic masterpieces of DAOT. The existence of "Gene-Tyrants" who ruled entire kingdoms is mentioned multiple times. -We understood our genome so well that we could surely create new Abhuman species at will and without any other objective beyond what we did because we wanted to and could.
From what I understand, the products of the emperor work differently than dark age tech. As in while dark age tech can basically turn someone into a different species, the Emperor and his gene editing modifies the soul on a semi consistent level, that the dark agers seemed to have trouble with.
DAOT humanity's mastery of genetics is why I prefer the idea that the Emperor was just the standard "Men of Gold" from that era that survived the fall, which would explain why he didn't want to be seen as a god. In the era he was born, humans like him were merely the norm.

It was too late for the Federation, and only a few techs survived from the Golden Age via STCs and the occasional Perpetual. It is a bit funny that the Corporate Mining AIs (now called Votanns) deployed to the Galactic Core by their (greedy) shareholders survived and even thrived from the lack of oversight and taxes, even creating their own labour caste (the squats) to slave and mine more minerals for them. It is less funny for the populated worlds or ships dismantled by the Votannic stelar mining engines (with the natives still on them). I mean profit at any cost is a dangerous directive to assign to an AI...right? On the other hand, the occasional Tyranid Hive Fleet sometimes gets caught and dismantled for biomass as well. The Votann AIs will not throw away such a nice free resource bonus.
I think Dark Angels being entrusted with a lot of dark age Tech is really smart. You use Lemon wolf boy as your brute force astartes killer/executioner. Dark angels are for when shits even worse then that. Keeping your best/most efficient legion in reserve is 4d chess
Then in 40K you have the Minitours SM Chapter who seem to have some pretty insane and non-standard issue war gear and weapons as well, and not just gear they have taken from other Astartes they have just clapped either. They have friends in high places though I believe..
I love the theory that The Emperor is just a product of the DAoT that got out of control. I don't really believe it, but it could actually make sense from a certain perspective. There is actually a basis for it in one of the books but I can't remember which one it is off the top of my head.
What if what we know of his background from Master of Mankind is correct, but during the DAoT his status as a powerful perpetual psyker was found out - and they weaponized him? It could go on to explain why he didn't travel to the warp gate and juice up on stolen god powers sooner, allows for the c'tan shard on Mars, etc.

In the middle of the galaxy there is a supermassive black hole. If you get closer to this hole the gravity is higher, that is why galaxy core is ridden by dead and crushed planets. You can't just say things and expect people to assume its truth without explaining. So if you mean the supermassive black hole as the core of the galaxy, than the further away you get from that, the weaker the gravitational attraction will be. There is the overall gravitational force, and then there is planets gravitational force. Since larger force is exerted on planets within the core, thus it converts to being that inhabits these planets. I found literal thesis by doing one google search that disproves your line of thinking. The changes aren't massive, but they are still there and prolonged exposure can cause health problems. In short too much gravity is bad for a long time, so they had to adapt their bodies.

I don't understand how there isn't a pocket of DAOT tech humanity still out there. Even with the war against the machines, not all advanced AI would have rebelled, that would make it less than advanced AI.
Humanity was so Dominat for around 5000 Years that they essentially FORCED the Eldar and Orks (who were more advanced at the time) into peace pacts. The Orks, who exist to fight and enjoy war, the harder the better, were so done losing to Humanity, they purpose made Ork Ambassadors just to go and meet with Humanity and accept the Peace Agreement. Insane. The Primarchs did not exist at this time, thus it IS Malacador's Phychic Blocks that prevent any of them remembering him. Horus seemed to remember his name, but Malcador threatened to kill him if he so much as uttered it. Rogal Dorn demanded Malcador remove the Block, claiming he never would have allowed it in the first place. He began crying and then made Malcador reinstate the mental Block. This happened in the roughly 300 year period of the Great Crusade, thousands of years after they had guns that erades your existence.

Humanity was so Dominat for around 5000 Years that they essentially FORCED the Eldar and Orks (who were more advanced at the time) into peace pacts. The Orks, who exist to fight and enjoy war, the harder the better, were so done losing to Humanity, they purpose made Ork Ambassadors just to go and meet with Humanity and accept the Peace Agreement. Insane.
The Primarchs did not exist at this time, thus it IS Malacador's Phychic Blocks that prevent any of them remembering him. Horus seemed to remember his name, but Malcador threatened to kill him if he so much as uttered it. Rogal Dorn demanded Malcador remove the Block, claiming he never would have allowed it in the first place. He began crying and then made Malcador reinstate the mental Block. This happened in the roughly 300 year period of the Great Crusade, thousands of years after they had guns that erades your existence.
It could be fate of one of the Primarchs but not both.
