    Soup has small diced pieces of vegetable and meat. Stew has larger pieces of vegetable and meat, half the size of a baseball, also, has large pieces of cabbage, and traditionally has 'dough boys' on top - a spoon of biscuit dough placed on top of the stew at the last 10 minutes of cooking, pot lid on top covering, dough raises & is steam cooked.
    Chowders are milk based soups, made with potato and onion, then different types like corn chowder or seafood chowder.

    1 lb of Beef Cubes, I used chuck
    1 Large Carrot, diced
    1 Onion, chopped
    2 Stalks of Celery, diced
    5oz of Button Mushrooms, sliced
    ½ cup of Pear Barley, rinsed
    8 cups of Chicken Stock
    1 Sprig of Rosemary, minced
    2 Sprigs of Thyme, minced
    2 Tbsp of Olive Oil
    ½ cup of all Purpose Flour
    2 Tbsp of Fresh Chopped Parsley
    ¾ cup of Frozen Peas
    Salt and Pepper to taste

    Recipe for doughboys: 250ml flour, 15ml baking powder, 3 ml salt, 160ml water and 22ml oil. sift dry ingredients, make a well and pour in wet, mix with fork. Spoon on top of stew and cover. Do not lift cover for 15 min. Have it simmering softly.
    *Have lots of liquid, take out some veggies if needed, so stew doesn't get dry and burn. Will be formed like clouds, and be soft!

    Great video! That's one of my favorite soups. I should have watched this video before I tried to make it, because I put in more barley than I needed to. It really does expand a lot! IT became more of a stew than a soup 😅

    Which is a regional variation on the traditional British Stew Dumpling brought over by the Colonists. Many of the places Britain conquered have some kind of a stew dumpling. In the Caribbean you'll find Spiller's Dumplings which tend to be small and are closer to pasta.
    Stews and Soups are ancient variations of cooking likely dating back to sometime not long after the advent of agriculture and almost every culture in the world has their versions.

    In Chinese cooking, we usually use some kind of starch to coat the meat. It usually comes out deliciously, you may want to give it a try.

    This is wonderful comfort food, for cold Canadian winters, I know you are not cooking for Canadians exclusively though! And of course it is good for Northern USA persons too, on cold days!
    Is it also a traditional Italian dish? Or just a dish you found in North America?
    My mom is the 3rd of 9 children, and was not interested in housework as a kid. So she didn't know how to cook when she married. But she learned! And became a stew&soup queen! She always gets it right!

    wheat/flour is usually considered a starch....in North America both corn starch and flour are used to thicken broth/gravy(not at the same time usually). :)

    Yeah, I noticed that! I can get my mom to email me her doughboy recipe if you wish. She was the third child of 9 & didn't care to learn household chores, but when she got married, she learned cooking fast! And well. She's no fancy chef Ramsay, but we were all well fed. Stew is a traditional dish made for years by our colonial ancestors :)
    Doughboy is used in beef stew. Use beef, onion, turnip, parsnip, carrot, potato, cabbage. Lots of salt and pepper. Cook on simmer for a few hours :)

    Soup is mostly liquid whereas stew is solid and chunky. As for chowder, I think it's technically a type of stew. It's mostly made with seafood or veggies and cream or milk.

    I would add them at least 20 minutes before is done, depending on how big you cut your potatoes, usually I cut them into 4 sections.

    i actually microwave diced potatoes then add them towards the end. that way they're cooked thru but don't melt into the soup :)

    Hi Ms. Laura,
    There is a Mexican beef soup called Albondigas. I've only had it once at a Mom and Pop restaurant. When I went back a couple years later the restaurant was no longer there. I would love to see you make that soup. It was so delicious.

    you can just boil them a little separately and add them to your soup bowl as topping ... i usualy do that because boiled potato is way healthier :) ... hope you like it ... just a suggestion

    Hi Laura just made this for lunch, I did not have fresh herbs but used a pinch of dried, loved it but the mushroom were not cooked enough for me. Thanks Laura keep up the good eats.

    potato cooks depends on how big you cut the chunks! if u cut them pretty small like an inch cubes, probs 10 min before the soup is done i think is enough

      Barley is not gluten free, so no point in just replacing the flour

    For the best flavor, use venison stock. Make your own from deer bones, which you should be able to get from your hunting friends during deer season or at a better butcher shop.

    I've always had a hard time making a vegan soup, getting good flavor. Nothing matches beef or chicken broth. But, I decided that pureed can tomatoes make a good soup base :) Not the same but still delicious :) And you can still add herbs. I add them to the oil at the first, with the sautéed onions and vegetables.

    it kinda depends on how big you cut the potatos, but i'd add them at the last hour of cooking, if you wanted them to be cooked and still kinda firm. Potatoes kinda need a long time to cook.

    I can give you a nice tip how to roll meat in the flour very fast and evenly: just put the meat in a plastic bag and add some flour (the amount you think is enough), close the bag and give a good shake:-)

    my all time comfort food is macaroni schotel (hope i pronounce it right :D )
    it was just mac and cheese with egg+milk mixture instead of white sauce

    "Considered" does not mean it is so.
    Starch is something that you can make by washing flour in cheesecloth.

    No, googling just repeats the words used in North American cuisine;we realise that when North Americans call corn, potato, wheat, rice a starch, it means it is a food source high in starch.That is just North American custom, in cooking, and in the economic market, perhaps Asians may not realize that & it gets confusing when we talk food.
    Personally I don't find much difference dredging meat in corn starch or flour, we do both here. But you can't make a tempura batter with flour lol!
