I am 55 years old and my mom died when I was 27 and I never was able to get recipes from her(she was born in Sicily)but you helped me on a lot of dishes, my wife doesn’t cook so it’s all on my back, thank you 😊

Then I add water or stock just to cover the beef and add an envelope of Lipton Onion/Mushroom soup mix. I let that simmer on low for 2 hours then I'll add all the vegetables and cook another hour. I add fresh parsley at the end and test for seasoning. I also like to add more uncommon vegetables such as cubed rutabaga along with carrots, potatoes, sliced mushrooms and celery.
To anyone watching this in 2018 please do not I repeat do not stuff all your meat in the pot at once you want to brown the meat not steam it add a bit of meat at a time give it room to brown and I promise you by doing this the meat will have a better texture in your mouth
Nice catch, also I put onion and garlic early and reserve potato and carrot and celery for last 40 minutes I like firm veggies. And a little fresh parsley at the end.

i think its better to brown meat in smaller batches on larger pan and let it to get a crust, then de-glaze brown bits off it with red wine and pour it into the stew pan. gives much stronger meat flavour. otherwise its a great recipe.
mbchudno Agreed. I winced when she said the meat was all browned at 2:19 when the meat was clearly a steamed, grayish color. But she was ill when she filmed this, so I'll cut her some slack. :)
Yeah. No complains. Video is good. My better half sometimes lazy to sear the meat properly when she does it with similar recipe I taught her, so its almost a reflex comment :). Big thanks to the chef. It looks delish anyway.
i find that if you get one slab of meat, you can simply cut it in steak shaped peaces, then give 2 sides of each really good crust, then let them rest a little while you do the other pieces of meat and then just cut all those "steaks" into bite size pieces and stew them. that way you don't have to deal with 100 little pieces and you don't loose as much juice while searing. You kind of get sear on 2 sides, but i think its plenty for stewing.
Cooking this now. Smells real good. Only thing is potatoes over cooked to the point they just mashed away. I think it will taste great. Next time I'll add the potato to the pot a little later
Yeah the potato for 2 hours? Literally it made the stew very starchy because at the end of cooking, the potatoes were no where to be seen. Great flavours though

Laura, I just wanted to say Thank You for sharing this recipe. It is cold here and my husband and I have terrible headcolds. This was a perfect treat to warm us up, it was filling and was very satisfying and comforting. Oh and it was delicious! :)
In Puerto Rico we don't use flour as a thickening agent. we use tomato paste and the potato itself serves as a thickening agent. Bechamel sauces and the like seem foreign to a home cooker. But common to a trained chef even if he's from Puerto Rico.

If you want it thicker, don't put a lid on it for the full time it is cooking. Cook it without a lid until it thickens to how you like it, then put the lid back on for the rest of the time.
I make it similarly, but I don't use flower or peas, and I cut my beef about 3 times as big. I also add garlic, fresh thyme, 1/2 tsp of Emeril's essence and a tablespoon of balsamic at the end. I usually make 2-3 times this much at once, then I portion it out and freeze them. I make out 12 qts at a time and it's always delicious. People at work are always jealous when I heat one up in the microwave.
In the Philippines we call this dish CALDERETA but with a hint of spice. U should try adding a little bit of maybe dried chilis or fresh chilis. If in any case you want something spicy :)
Calderetta is the king of Filipino food for me. One of my favourite Asian dishes. I think they use liver paste and peppers too. It's probably not what a Westerner would expect if he is expecting a winter stew though!

She added way too much meat in the pan all at once; it needed to be done in several batches at a time, with all that stew beef. Too much meat together steams it, it will never brown.
Yeah she overcrowded the meat way too much. I would have broken that batch into halves or thirds. She steamed the meat rather than fry it. She didnt add any flavor from that meat.

Just made this...it is so good. Used Cupcake Vineyards Red Velvet Wine (recommended by the lady that worked in the wine dept). Only used 2 pounds of stew meat; used a 4 cup box of beef broth; also used dry Rosemary and Thyme instead of fresh. I had never cooked with wine before; I will never make beef stew again without it. No, the vegetables don't overcook. This recipe is the best tasting beef stew I've ever tasted. Thanks Laura!
Hey Laura, is there a reason why you don't coat your meat with the flour before you brown it. A lot of people do that. That's why I ask. Another question, you went ahead and put those veggies in the broth to cook, then added your meat, don't those veggies over cook when cooking it for 2 hours. I mean I can see cooking the meat like that, but the veggies themselves only take 25 to 30 minutes to cook. Last question, PLEASE tell me what kind of wine did you use in that? I don't know much about wine. My 18 year old daughter picked out this nasty wine, HAHA! called Barefoot, (never again, lol). I like a robust flavor. So, please tell me what you used?
the carrot will be too crunchy if not cooked 2 hrs or so, the potatoes i suppose could be added the last 45 mins, and the onion and celery are more for stock lavoring than actual veggies. as for the wine, any cheap red wine ($10 bottle) usually works, as you're cooking out the alcohol. i just ask for red cooking wine at my local outlet.
I always coat my meat in flour. I make a pork chop casserole and I started coating the pork chops and browning them before I add other ingredients. Have you looked at cookinginrussia yet? He is a true five star chef and there are alot of recipes, I highly recommend you look at his page if you have not already :)

+Gina Pocan You have to remember that you are going to cook the stew on low - meaning the stew will not be at a rolling boil for 2,5 hours, so the veggies will cook low and slow, and get a great consistency :)

Just made this...it is so good. Used Cupcake Vineyards Red Velvet Wine (recommended by the lady that worked in the wine dept). Only used 2 pounds of stew meat; used a 4 cup box of beef broth; also used dry Rosemary and Thyme instead of fresh. I had never cooked with wine before; I will never make beef stew again without it. No, the vegetables don't overcook. This recipe is the best tasting beef stew I've ever tasted. Thanks Laura!

Hey Laura, is there a reason why you don't coat your meat with the flour before you brown it. A lot of people do that. That's why I ask. Another question, you went ahead and put those veggies in the broth to cook, then added your meat, don't those veggies over cook when cooking it for 2 hours. I mean I can see cooking the meat like that, but the veggies themselves only take 25 to 30 minutes to cook. Last question, PLEASE tell me what kind of wine did you use in that? I don't know much about wine. My 18 year old daughter picked out this nasty wine, HAHA! called Barefoot, (never again, lol). I like a robust flavor. So, please tell me what you used?
the carrot will be too crunchy if not cooked 2 hrs or so, the potatoes i suppose could be added the last 45 mins, and the onion and celery are more for stock lavoring than actual veggies. as for the wine, any cheap red wine ($10 bottle) usually works, as you're cooking out the alcohol. i just ask for red cooking wine at my local outlet.
I always coat my meat in flour. I make a pork chop casserole and I started coating the pork chops and browning them before I add other ingredients. Have you looked at cookinginrussia yet? He is a true five star chef and there are alot of recipes, I highly recommend you look at his page if you have not already :)

***** ya kidding, she's my top favorite. I watch a lot of them, but I like her style. I'm so jealous of her, HAHA!!! How she keeps her figure and eat the way she does just amazes me. :P Her meals aren't for the immature cook, that's for sure but, she invites everyone to the table. Great gal!!!!
+Gina Pocan You have to remember that you are going to cook the stew on low - meaning the stew will not be at a rolling boil for 2,5 hours, so the veggies will cook low and slow, and get a great consistency :)
