The blade would have to be hot enough to glow to get any real tangible benefits from the flame. But that alone would cause a whole host of problems.

I wonder if the reason it performed better with a bevel than a sharpened edge is because of the softness of the steel, the sharpened edge being perhaps so small and weak due to the heat that it would just lose any effective edge too quickly. While on the other hand the bevel although not sharp its shape can be easily maintained so that what 'edge' it has isn't lost. Just a guess though.
You should test incandescent weapons next. There's a lot of glowing orange hot weapons in media, sometimes it's the whole thing, sometimes it's just the edge, though I don't really know how the later could be replicated IRL.

a possible reason is that when the sword is blocked, the oil could fly into the enemy, burning their skin, the pain would weaken their body, giving you some advantage, or it could hit the eyes, blinding the enemy the heat of burning oil on your iron armor should be enough to make you protection become a oven, this would hurt and i can't imagine fighting while my skin burns
If you're doing a fire shield use pineapple skins for protection and coat the outside in a flammable substance. But pineapple is incredibly fire resistant

I'm signed about my fire sword you know limiting my own vision increasing my own visibility to potential enemy bowmen, making things more difficult for me to wield, limited in actual use case. I guess if you're inside in an environment that's not terribly damp with no fear of ranged opponents and rapid regeneration of the target is concerned you might have found a potential use case for them. Honestly I think the biggest advantage IRL would be the intimidation factor, much more likely to hesitate when it's a flaming anything coming at your head. Hesitation is death, it is known
in the Forgotten Realms books Obould (orc leader) uses flaming sword he's able to controll the intensity and position of the fire so at one point he used it to trick warrior-elf into losing his sword out of sight by removing flames from part of it and tbh it lookd like a legit move if you have that type of "magic" available

Hello so I would like to suggest o weapon to test out and that would be the Halo energy sword another suggestion because the energy sword is an elite weapon maybe you could do one sword with a human handle and then the other one with the elite handle and your channel is so dope it honestly makes my day when you post a video
9:08 Testing that out on water bottles was actually VERY unfair, since water has an absolutely absurd ability to absorb heat. You could have put that bottle directly into a rolling campfire and it wouldn't burn until enough of the water had boiled out. Heck, before the invention of cooking vessels people used to boil things in hide stretched over a fire. Again it wouldn't burn at all as long as there was enough water in it.
if i may note, just to add this in here, on the meat, the blackening on the meat i don't think is charring, and instead just soot build up on the blade, rubbing off onto the meat.
Saw a design for a shield with a bellows and a torch. Soo could compress the bellows by bringing the shield in and throw hot ash and fibers a short distance
I feel a flaming blades main strength would be prolonged contact. Not laying against them, but something like 1-2 seconds of contact per strike. Sure your wounds would be partially cauterized, but the potential damage internally, with the heat preventing any proper treatment would be *crazy* with a heated weapon.
Another small thing is it is a torch at the same time. IE going into a cave in D&D you have your shield in one hand and your flaming sword in ther other you can still see and will not need a 3rd arm to hold a torch for light.

For a flaming sword to be useful you would need 2 specific properties one the flame can not touch the blade or there is a constantly supply of fresh fuel. A old stage magic trick of setting your hand on fire for example uses plain old isopropyl of a high percentage. It is easy to put out and you know when to put it out as you will feel your hand getting warm. When you first light it your hand gets cooler as the hot air goes up and draws in cool air. So as long as there is always more fuel being added the blade will if any thing get a little cooler. And the second thing is the burning fuel needs to transfer from the blade to the target. You hit on those 2 things and even a slight glancing blow can become a very serious threat even if the blade does not bite in to flesh the clothing or gambeson could be lit on fire worse yet if it is under the armor and on fire by the time they get the armor off they are well and truly screwed and in mid evil times that would have meant death
The idea of using a fire sword not for adding to attack but for shock value/ distraction could be if not super useful at least narratively interesting. Or putting something like flour on the sword lighting it and then flicking it at your opponent before attacking as a distraction. Not necessarily useful but more logical than just hot sword. Tho I suppose at that point you could just throw sand at your opponents face.
I honestly think the majority of a fire sword’s advantage comes from fear and flinch. Even on a block, fire is going to rain on you from the other sword, it’s more about morale than actual damage. That of course means that landing a strike is easier, or getting them to shit their pants as you approach is giving the fire user an advantage to cause more damage more easily.

From a nerdy perspective, Game of thrones described the post-blade of a fire sword gimmick to be an absolute wreck, hence Gendry mentioning thy at the red priest bought many a blade and in bulk before Performing such a feat. That said, I imagine the “heat-metal” version of a flame sword to be the vastly superior of the two concepts. Outside of magical fire which frankly isn’t feasible. I would like to see the damage comparison of the fire blade vs. Meat with, and without, the flames. I think the majority of the damage was just from the somewhat dull blade.
For comparison, I kinda want to see the fire sword used... but without fire. Could that sword profile do that same performance without the flame? It really does need that control comparison to better gauge if the flames actually did anything. Because, to me, it didn't look like the fire did anything except when the edge was rubbed against a surface or the swing was stopped in the material. Like the pool noodles... they started melting during extended contact, but the swings had brief contact. The pork on the other hand, swings would be stopped by it so the contact was extended and allowing the fire time to singe.

I'd say a fire sword can be very brilliant, if it is used correctly and specifically as a piercing weapon.
