It's a great idea to freeze the cooked rice in portion-sizes! I'm the only one in my family who eats brown rice and I often don't bother to cook a tiny portion for me, so I'll surely copy this idea! Thank you!
I love a roasted veggie bowl for work lunches!!!! It's my favourite! Going to add your tofu to my mix AND start freezing my brown rice in hockey pucks! Brilliant!!!

I love the hockey puck idea! When I cook a pot of grains I tend to go thru the whole thing in a day, making it the main portion of my meal. I never thought about freezing them. This would help me so much!

Have you tried roasting unpeeled garlic cloves with your veggies? Once roasted, cut the end off the clove and squeeze out the garlic like toothpaste. It turns mild and sweet when roasted like this in the oven. Might make a nice addition.

I make "South in Your mouth" soup. Black eyed peas, Collard greens, Okra, Mixed veg, crushed tomatoes, lima beans, extra green beans and sweetcorn And whatever I happen to be hanging in the frig. Also onion, garlic and whatever spices I want.
Rice in the muffin cups is a magnificent idea! Thanks. Can’t wait to try the recipe, especially the marinated tofu. This is so much more economical than the pre-made frozen entrees. Green beans are really easy to grow in a home garden. Freshly picked green beans and sugar snap peas are amazing, Brian.
Thanks for these recipes. I am a little bit in doubt about the rice though. I have learned that rice, potatoes and in general starchie things should not be frozen because they become soggy. It happened to me once with boiled potatoes that I have frozen...absolutely something inedible.
I love how y'all make sure your food has flavor. I've never been one to put just salt, pepper, and garlic in a dish and maybe an herb and call it seasoned. Definitely looking forward to trying this one. I've just been having a hard time getting roasted veggies to come out right since I quit using oil. Maybe the tahini will help.
MsDorkness I have had the same issue. The veggies just aren’t the same. I have been spraying a tiny bit of my olive oil pan spray from my misto thing. It works pretty well but it’s not totally oil free.

Your Super Power Veggie Bowls look delicious! Thanks. I'm allergic to sesame seeds so tahini is out for me. I like to use a fresh Thai peanut butter sauce or my homemade soy milk yogurt (or silken tofu) with Braggs liquid aminos, Braggs 24 herb blend, vinegar and nutritional yeast. These are great as marinades or salad dressings.
1) fabulous recipe ideas - will definitely try the veggies and serve with brown rice (Naturreis) - like the idea of the "hockey puck" rice too. 2) Will have to check Aldi here in Germany to see if they have the no salt seasonings you have in the USA.
And having been to Aldi this morning, they don't have the seasonings referred to but I bought some white pepper and frozen dill (for another recipe) as well as a lot of organic veg and some white beans which were in the reduced section.

I use the recipe for “Crispy” Baked Italian Tofu from this channel as a basis for different kinds of tofu. I sometimes marinate it in a mixture of minced hot red pepper, garlic, ginger, and low sodium soy sauce and a little low sodium soy sauce. I bake it the way Brian and Jessica bake the Italian tofu. I am experimenting with a marinade containing chipotle but I haven't perfected it yet. I serve it over brown rice with lots of vegetables.
What?!?!?... just a few seconds in and you said, "we froze our tofu... it gives it that nice spongy texture" - 🤯 🤯 🤯 Mind is literally blown. I did not know you could freeze and then thaw tofu and have it be edible! Amazing.

I love this. I made something like it but didn’t season it and then I can decide when I eat it how I want it. I portioned it out and froze it. I have used several different seasonings and it’s so yummy! I also portion my beans in a muffin tin. I love it because it’s about a half cut of rice or beans. ❤️

I was literally thinking about drizzling tahini on top of the finished bowl, when Brian said if you wanted to splurge add some tahini on top or sesame seeds, etc. Thanks for sharing this recipe :)
This looks so good!! After being vegan for about 3 months I really want to take the next step and cut out oil and processed vegan "junk" which i eat about 4 times a week. Any tips for that specifically? Cutting oil? It is harder than I thought.
Oil can be tricky because basically everything store bought will have some in it. The key for us has been making everything at home and using things like tahini that have natural oil in it but are still the WHOLE ground sesame seeds and not just the extracted oil.
I really miss living in a town with an Aldi’s. North Dakota doesn’t have Aldi’s, Trader Joe’s or Whole Foods. But I’ll see what I can find and try this but I will definitely try the baked veggies.
Great job! I have only recently had some tahini that I actually liked. Usually I think it is too oily and flavorless but they have some at Cava that are fab!

Yep, freeze it and then thaw it out when you want it. 😀 It really changes the texture and it will absorb more seasonings. 🙂
