      guess you lot do not want to look 40 at 57 , if your body is not given the right foods you will age fast and not only are you cutting your food up a week in advance your leaving the juices to soak away , lol thats nutrients soaking away , and avocado , do not knock it, its not a super food for nothing , i bet thats why your guy is so fluffy , he is hungry , no oil or fat for his body to repair its self , he is snacking on junk , yes you are we both know you are , feed him right and he will not need junk, if you are not going to use oils then at least eat them , and not like 10 nuts a day and half a dozen seeds , oils and fats are healing , repairing , medicines , for goodness sakes , eat wisely , your body is your temple yes , and properly maintained it will keep you looking good for many years , but stupid faddy diets are dangerous not cool , if all you are getting is that as a main meal after a whole days work , its no wonder he is junk fooding behind your back , feed the poor man

    I struggled with weight my whole life until going Vegan in my 50s. I did it for the animals but the weight loss and health benefits make it a no brainer.
    You two are a great example !

      Thank you! We have really enjoyed this journey. I thought that switching to a whole food plant based diet would mean restricting what we eat, but it actually opened us up to so many new things!

    A trick we have is always putting paper towel at the bottom of each dish that goes in the fridge. We even do it for watermelon, and I find it adds days to its life expectancy after cutting it up.

      You can use clean cut up cloth as well! I use old tea towels and wash them over and over again. :)

    I have a thing about eating cold raw vegetables in the winter. It just feels wrong intuitively, so I eat a lot of soup and stir fry instead. I like this video, and it just occurred to me in The bleak end of December that I could use this method to prep daily stir fries! Thanks for the inspiration!

    I eat two, what most would consider gigantic, salads everyday. Romaine, baby spinach and then the sky's the sky's the limit!
    I love roasting veggies like Brussels sprouts, carrots, sweet potatoes, broccoli, cauliflower and adding them warm to my salad. The warmth adds a whole new layer of delicious. Also feels more like a traditional meal when mixing in warm veggies.

    I've eaten raw mushrooms for many years and this is the first time I've heard that they should be cooked for safety. I know there are some wild mushrooms that are not safe to eat but the ones in grocery stores or farmers markets are safe to eat raw. I do prefer the taste of cooked mushrooms (and I also rinse my mushrooms lol). This is a good idea to prep the week's worth, I hope to try it soon!

      Thank you for commenting! 😃There is some debate as to whether the toxins in raw mushrooms really pose a threat over time. However, it is generally encouraged to slightly cook your mushrooms just to release their full nutritional value. 😃

      You had me loving this salad until you got to the mushrooms... well, I was so glad to see you did not add the mushrooms RAW. As I too have read about the toxins in mushrooms that are not cooked. Thank you for this video. I am a new subscriber to your channel!

      Alton Brown covered washing mushrooms in his show Good Eats. He weighed the mushrooms and had someone brush the dirt off the one set and then washed the other set under water. The mushrooms were then weighed again and the amount of water absorbed (the reason you shouldn't wash them) was negligible and the mushrooms were cleaner. So there you go!

      I've never washed mushrooms after seeing the diff over 40 years ago..washing them turns them brown and heavy and slimy if they sit for any time...nope..not for me..a damp towel or mush brush is fine..

    Thanks for the video, I changed to a vegan diet 18 months ago, I initially lost weight; but my weight loss has stopped, reversed to be honest. I’ve got to give oil free a go, I’m going to try the oil free hummus on a salad tonight. I feel inspired 👍

      Why oil free? Oils and fats allow you to absorb your fat soluble vitamins like a, k, d and e. Don't cut things out. Just reduce.

    I just watched this and love your opening words of wisdom Brian! Very true! I actually love you both. Thank you for being real folks; we need more of you. Well, just an FYI concerning washing mushrooms (which I also have ALWAYS done); years ago one of Alton Brown's episodes of Good Eats did an experiment of washing mushrooms vs. not washing them, comparing how much water they actually soaked up (since the squakers say it waterlogs them). The difference was negligible. Therefore, feel the vindication, as I do. 😉 I say, who cares anyway? They're ALREADY full of water and it all gets released when you dry saute them.

    I recently lost some weight and I found that using a waist trimmer has helped folks who had significant weight loss to strengthen and tighten back up the skin . You can also use organic coconut oil and clear wrap under it to help lose fat in the stomach area as well as arms and legs. I am trying that as we speak. You both are amazing for your life and health change. I am Super impressed!

    I cut all my veges up (broccoli, cauliflower, red onion, carrots, celery, peppers, zucchini etc) in a soup pot so I can mix it up. Then I bag it. Every day I reach into the bag for my salad. Then I add lettuce, kale, garbanzo beans, chia seeds, roasted brussel sprouts, roasted sweet potato. It makes me so happy!

    I had just posted, a wee bit earlier today, how it would be a great way to live (most of the time) cooking something like this Caribbean something or other grain dish , which has good spices and a bit of vegetation in it, at the beginning of a week. Maybe prepping a big salad for the week while that's cooking and then have very little food prep or dishwashing throughout the rest of the week. And, the next week, get a different grain, fruits, veggies - whatever - so that you have variety. So, I am very happy to see this. It goes right along with what I'd like to do, to further simplify my life while bettering my health. Thank you for sharing!

    I love mixing tahini (2T) with coconut aminos. (1 T), balsamic vinegar (2T) and nutritional yeast (2T) with 2T water and a dash of garlic powder😍

    I remember Alton Brown doing a test about washing shrooms and debunked all the chefs telling everyone not to. They don't really soak up that much water. Wash away. And that is a great looking salad. You two are really glowing. This way of life agrees with you.

    If I remember right, the carrots giving better eyesight thing was actually propaganda from the British forces during WW2, I *think* to help explain the uncanny accuracy of targeted bombing raids after the Enigma was broken... for some reason it's just stuck around!

      There is evidence of this propaganda being created but not to hide the fact that the British pilots had radar. It is generally believed by historians that it was created so the population would grow more carrots since rationing was in effect. So the answer is yes. It was propaganda but the meaning behind that propaganda has shifted. There is a bit of evidence that eating carrots will improve eyesight. However, the amounts involved would be crazy. There are a lot of other health benefits from eating carrots though.
      On a side note... Studying WW2 aircraft is one of my favorite hobbies. :-)

      @@BrianAKrock Ahhh you learn something new every day! Any and all factoids I 'know' are dubious and should probably be checked for accuracy... I've not dug deep into the historical stuff just yet; there was a huge gathering of historical wargamers and amateur sleuths at the old gaming store I used to go to in the UK, before emigrating, and some of the stuff they could tell you was crazy. I think I know the names of a few planes, and that the Brits used to try to salvage every crashed German plane they could because their engines were better than ours... again, all facts should be checked for accuracy :P hehehe! Just about to finish Day 5's edit and upload!

      "The *on-board Airborne Interception Radar* (AI), first used by the RAF in 1939, had the ability to pinpoint enemy bombers before they reached the English Channel." It also claims that the propaganda that carrots give people *good night vision* for the pilots, as well as citizens during the citywide blackouts, was started as a cover for the use of the on-board device.
      Both could be true, since it also says they encouraged "Victory Gardens" due to ships carrying food not getting through, and the gov promoted the idea of using carrots to sweeten dishes in place of the rationed sugar.

    What awesome salad ideas! I also am an unapologetic mushroom washer. The quick sautee removes the water. I purchased that veggie chopper and it is wonderful not only for salad prep but for making salsa or any recipe. Very quick and easy to clean. Having everything prepped ahead of time is really convenient. Lentils are an easy prep too--red are quicker and look pretty, brown take a little longer to boil but all are good sources of protein. Love the addition of seeds and nuts!!! And what's an episode without Peef!?!

      Good luck! If you find the plain potatoes to be too restrictive, I would suggest researching McDougall's "Mary's Mini" or The Potato Reset by Jeannine Elder. They are still potato based, but with a bit more flexibility :)

    you should try using the instant pot and cooking bulk dried beans. Nothing added unless you want it to be.

      We do that quite often but we also have canned beans on hand just in case. 😀

      Great idea. Also get a canner from Walmart. An 8 pound bag of pintos makes 13 pint jars. Add whatever flavors you wish.

    Great video. I know how it is when you work every day, and come home tired. Hard to stay on plan. This is a great idea. Everything is closed up in glass containers, so they keep well, and you can see what's in them. Reusable containers too. Thank you for all that. With all that hummus, I wouldn't add the black beans, and might add a sprinkle or two of a good vinegar. Thank you for posting this. Much appreciated.

      I was just going to note that I prefer Garbonzos to black beans, then saw they were using hummus as dressing. That would be Garbonzo overkill, lol.

    Chickpeas soaked and rinsed and resoaked a couple of days and then boiled with a bit of salt drained and cooled in the refrigerator is another great salad addition. Watch how they soak up the water and triple their size and begin to grow a tiny root! So cool ! Sprout one and put it in a planter !

    I don’t spend time prepping vegetables, I cut chunks and chop away in the chopping bowl, works great! Love the hummus salad!

    I do it in jars. Hubby won’t make a salad but just having it ready for he’ll eat one daily.

    I used to like the green bell peppers esp. because they are less expensive than the other colors. But then I was a raw foodist for a while, and one day I ate a bowl of nothing but green peppers -- and BOY did I suffer in pain! It was like a boxing match in my stomach! At the time a long-time raw foodist I had met named T.C. Fry was around, so I called him and told him about it. He said it was because green bell peppers is UNRIPE FRUIT. Wow. What a surprise! I have never had any problem with the ripe yellow, orange, red and purple bell peppers, and from ever since then I avoid green bell peppers unless they are cooked into something I am eating (but I won't cook them myself). I LOVE salads. Lately I have been adding fluffy cooked brown rice to my salads as well as balsamic vinegar as the salad dressing, often some garlic, black pepper and a wee bit of salt. (Oh, and I had a problem with eating raw mushrooms as well, which make me slightly nauseated, so that's a great suggestion about cooking the mushrooms.) I sometimes also put beans in my salads as well as avocado (which I know a lot of people think it is too oily). I love to put several types of lettuce in my salad: like baby kale or baby arugula, spinach and romaine or other lettuces. Salads are a real lifesaver for me -- and I like them mostly for breakfast! I don't use all the things you do in salads, but lately I have been enjoying things I didn't used to like in my salads, including celery (cut small, like diced), radishes, shredded beets, cucumber (also diced -- I have teeth problems thus all the dicing), and diced onions. Always I love to have tomatoes, and sometimes I like to add a few sliced up Spanish olives. P.S. I probably never would have tried balsamic vinegar, but started doing it because the heart doctor, Dr. Caldwell Esselstyn, Jr., explains how eating leafy greens (or even broccoli) with a little bit of balsamic or rice vinegar and the chewing you do where it all mixes with your saliva makes it so that more nitric oxide is created which REPAIRS arteries that have been greatly injured by oils and whatever in the diet. He is so into that he wants people to eat a cup of greens with "a few drops" of vinegar six times a day! I don't know that I will ever get there, but I do know my arteries all over my body including my heart can use all the help it can get!

    Love this video! Came here while researching tips on produce storage/prep because we're trying to eat more fresh produce. You guys are great to watch and very informative as well. I learned new things and was reminded of some things I used to do, some things I always wanted to do, and was inspired to follow thru with implementation no matter how much whining I may have to put up with - from myself as well as fam ; ). I learned to make "chopped salads" from a health segment on the news years ago. Basically it means you make everything about the same size so that each bite (perhaps more of a "scoop" than the "puncture" we're used to) has bit of everything in it, including a balanced amount of dressing.
    I loved it, but not everyone in my family does. One drawback is that cut edges, especially of leafy greens, spoil faster and you'll have a higher ratio of cut edges. However, you'll end up with more food and less air in the same amount of space, so your salads will be more filling (a good way to sneak more into the kids' diets). Nuts and seeds and crunchy bits of veg like bell peppers or fruit like apples actually give it a bit more "air" to keep a bunch of small cut leaves from just sticking together and becoming mushy. I love your idea of pre-prepping each ingredient and storing separately - much less onerous than creating each meal's salad from scratch. Should also help with the differing tastes of family members.
    I remember that when I started to eat big salads (last time I was healthy) I would feel full too quickly then get hungry again quickly as well, until my body adjusted. Also, as you showed with the mushrooms, blanching, pre-cooking, fermenting or otherwise processing some foods may be necessary (different for each person) to allow comfortable digesting of foods that may no longer then be "raw" but are still "fresh." Taking food enzymes (like BeanoTM, though it doesn't have enzymes for every type of food) with the first bite can also help.
    Thanks for the inspiration to follow thru. It's good to have the reminder for myself, and notice for the fam who haven't traveled that road, that both the prep and the eating practices will take a while to get used to, and require adjustments along the way.

    I am following this approach for lunches and it is working very well! I tried jicama (never had it) and love it. One thing I am adding is cubed, oven roasted sweet potatoes and carrots. They caramelize and act like a crouton. Next on my agenda is making my own hummus.

    I am so glad RUclips recommended your channel to me. Consider making your beans from scratch. They taste so much better. They cook up great in an instant pot and I freeze them in can sized containers so they are almost as convenient as the cans.

      Thanks for the tip! That is a good idea - I never thought about freezing them. We need a bigger freezer LOL. We do so much batch cooking, it is always full. We actually have a future video planned where we will compare canned black beans to two different kinds of dry beans (one cheap from Aldi and a fancy brand). I'm very interested to see how that goes, so keep a look out for that video in the future!

      Cutting the zucchini that way really does change up the look and texture. Occasionally I will toss them in some nutritional yeast or pepper before putting them on my salad for a little more flavor. 😀

    Your story is great. From someone who’s been WFPB vegan for 6 yrs now it’s worth it and only gets better. I’m sure you know this but not cutting/washing produce until using keeps far more nutrients (starts dropping within 15 min of cutting). It’s really easy to store fruit and veg whole and as you use it despite YT videos showing special containers, bags etc. But if prepping helps you eat more of them then great just try to keep peels and skins and leafs of broccoli/cauliflower etc even kiwi as that’s where nutrition is often concentrated. 😉👏🌱

      The chemical that they're speaking about is extremely low in white button mushrooms and the crimini which look like the white they're just darker brown. Wild mushrooms it is much higher and can be quite toxic to some people some people seem to develop almost in immunity I was once poisoned by somebody who switched out really rare mushrooms in a grocery store. I used them to make a stock and there is no way to fix mushroom poisoning you can just hope for the best. So I get a little sensitive to mushrooms. But still I can eat regular old grocery store mushrooms raw with no effect. Again it's super low.

    We had the Ginger Sesame dressing from the Eat to Live cookbook and it was SOOOOOOOOOOOOOOOO good. So good. If you’re familiar with Benihana’s it tastes just like their salad dressing.
    Also, OMG my 4 year old has that same guitar.

    I felt the same way about mushrooms until I learned how good they were for me. And if you buy mushrooms whole, and then slice, they last longer. You can also use hearts of palm for your salad. So tasty! I think you forgot your onions. Remember GBOMBS!

      Also on the question of rinsing your mushrooms, Alton Brown did the ultimate scientific analysis on Good Eats and found that mushrooms can't absorb a significant amount of water when rinsed or even soaked for a bit. No need to towel them 😁👍
