The spicy is most likely from the pepper Jack cheese. The rotels isn’t overly spicy. I’m sensitive to spicy too. I will have to try this soon. Maybe I’ll use Colby Jack & American

Block of Velveeta and a can of rotel, with hamburger or sausage work good also..

It looks good. The cheese will thicken as it cools down. I usually use velveeta, i bet the pepper jack cheese added some heat too. Maybe try monterrey cheese instead.

I love cheese dips. I make sausage and cheese dip. You take a block of Velveeta, a roll of sausage and taco sauce. I usually put in as much as I like. Cook the sausage melt the cheese and mix them together. Add as much h taco sauce as you like, I start with 1/4 cup. Serve it with tortilla chips. I think you will really like it! It's slap the counter good.

You should try adding a pound of cooked Mexican chorizo to your next queso dip. I actually cut up tomato’s, onions ( uncooked) and cilantro to my choriqueso dip and everyone loves it. I do use a whole big brick of velveeta though. However, I imagine just adding chorizo to any of your queso dips would kick it up a notch.
P.S. ~ Where are your furries? I miss them already! 🥰💜🥰

Cook some hamburger meat, then add a block of velveeta cheese, and some rotel tomato. Or my Mom would take a block of velveeta cheese a little bit of milk and a can of rotel tomato.
