John isn’t just putting a deck together, he is creating one working around/incorporating the trees and working with the huge stones already on the ground; he is creating as he goes along. Beautiful place to enjoy as a family. And Tara working in a made by John kitchen; just how lucky can you be? Enviable! Congratulations to both of you. Delightful family!!! ❤

Oh my goodness, Caruso looks adorable in his summer shorts and shirt...I think you need to call him Bam Bam from the Flinstones, secondary to him hitting that nail with such force! My gosh he is only 2 years old and his eye and hand movement are really good. Love watching you all work as a family, great memories being made! It still amazes me how John can just see things and make them.

Stuffed Golden Scallop Patty Pan Squash:
Cut the bottoms of the squash to make them flat. Scoop out the middle flesh. (I feed it to my chickens. 🐓) Salt and pepper the inside of the squash and put it in an oiled backing dish. I cooked mine in my lodge cast iron pan.
Make the stuffing: 1 cup quinoa, one can diced tomatoes and their juice, three garlic minced, 1/2 cup shredded Parmesan, and 1/2 cup chopped fresh basil.
Stuff your squash and cook them 30 - 40 minutes until they are tender. I foiled mine and cooked them on my Blackstone.
Before serving, top with a little more Parmesan, fresh basil, and salt & pepper.

Loved this episode as usual 🥰 I just wanted to say Tara that everything that you do not harvest or use isn’t wasted because it’s feeding wild life and also what is left on the ground is breaking down and putting nutrients back into the soil which will only help with future harvests so never feel bad about not getting everything in that you are growing, you are doing fantastically and you have learnt so much this season about growing, how much you can handle, what worked and what didn’t that next season you will be better prepared to grow what you like, maybe you could look at a slightly smaller garden so that it will be easier too leave the homestead too travel and explore and show the kids the rest of the world like you love to do once the growing season is over. It’s always takes up much more time than you think doesn’t it when you have an veggie garden not one job is a quick one not matter how hard you try to get it done lol. And I have to also compliment John on a fabulous looking deck which once finished will be spectacular I am sure. 🥰🥰

  • @jilldavidson2204

Tara, you are brave tackling all that preserving, well done. You can buy a wide mouthed funnel from kitchenware shops, diameter of hole about that of a golf ball, especially for bottling chunky fruit and vegetables without them overflowing, otherwise ladle them into a jug and pour into the bottle. It took me 15 years of doing that before I discovered the funnel! Remember if the amount to do gets overwhelming, weigh out the fruit and veg and bung into the freezer until you have time to deal with them. Free flow ( ie put them on a shallow tray or dish to freeze, then bag up when they are frozen hard) freeze plums straight from the tree, just weigh first so you know what you have, and they are perfectly fine to make sauce, jam or couli months later. Only jellies seem to need fresh fruit to work well. Great effort you, especially as it is hard to live up to one's mother's skills.

You can find the receipts online. I've never made it but my mom and aunts have and it is tasty.

Tara you just need to relax while canning all your veggies.
You can even fry green tomatoes and ripe tomatoes can be frozen for soups later. Excited to see your choices and produce.
So enjoy. From South Carolina USA

You could serve the curry beans over hot rice and put out toppings of raisins and coconut flakes and mashed up boiled eggs and diced peanuts. Each person chooses what they want on top, buffet-style. Yum yum!

Crusoe has such good language skills and hand eye coordination, he is a real credit to you both and having a dream childhood on the homestead you are creating. Must be lovely to see all the fruits of all your hard work in the vegetable garden….

One of my childhood recollections, from my paternal grandmother, is to eat “feijão verde” almost in every meal as a side dish, in the summer. I imagine that was because she had a lot in the “horta”. Cut the “feijão-verde” in slices, vertically, boil them and, afterwards, sauté them in a pan with a little beat of olive oil and garlic. Is a Portuguese recipe, if you are interested.
