Turkish Ramadan Pide, Fluffy Homemade Turkish Flatbreads

  • There are many Turkish dishes associated with and served during Ramadan (Ramazan), but breaking of the fast with this traditional bread, Ramazan Pidesi, almost signifies the holy month in Turkey.
    Available throughout the year, but the scent and the taste of this bread is always different during ramadan. It is a soft, porous and leavened flatbread that’s shaped by hand. Bakeries all over Turkey provide this Ramadan staple hot and fresh about an hour before evening prayer and you will see long queues by the bakeries, full of people waiting to buy freshly baked, hot pide to bring home just before the iftar meal.

    Ingredients:
    • 500 g flour (00 or any high protein bread flour)
    • 400 ml water
    • 10 g dry yeast
    • 2 tsp salt
    • 2 tsp sugar
    • 100 g bran or whole wheat flour to flour the tray
    • 1 egg
    • 1 tbsp yogurt
    • 1 tbsp sesame seeds
    • 1 tbsp nigella seeds

    It would be a lot of fun rolling the dough over the table to collect the loose salt 😀 That is quite the sticky dough though!! I can see that you had to be very careful when shaping the dough. The finished flatbread looks delicious as always, it looks vert light underneath the crust.

    I have never seen anyone add the dry yeast into the dough so late as you did - is there a reason for that? I always like to test my yeast in warm water first to make sure it is not dead. Anyway, this flat bread looks amazing. I would spread some roasted red pepper sauce or creamy goat cheese on my bread. Thanks for sharing and inspiring us with tasty recipes. 😋👍⭐

      I've found this also unusual at first tbh but this is what the traditional bakers in Turkey follow for this specific pide recipe. It delays the process with the yeast and gives it's characteristic texture.

      Of course it is not a must, but that's the traditional method used by the artisan bakers in Turkey, it's to delay and prolong the proofing of the yeast after kneading and forming the gluten for the pide dough.
