We actually did the live stream on time but for some reason it didn't load. so we attempted to do it again which fell a little short of the mark but the question still remains, what are we missing?

I’m bringing my camping gear back with me so I can jump on the scooter and go find camp spots. It’s a new way for me, not making solid plans with reservations, but here I go!

That sounds like a great plan! The closest we've come to camping is spending the night with a Taiwanese friend's family at a tea plantation.

We, too, get our best recommendations from locals here in Sevilla. But also, when new places open we read about it in the local press. It's a little easier to weed out the touristy stuff. That said, some of the 'touristy' spots are s-o-o-o-o beautiful and culturally significant that we find them worth seeing at least once.
But - screw all that! What I REALLY want to say is, "miss you (and, can't wait to meet you)!"

I am really looking forward to a reunion! I'm hoping we can make a trip to Spain sometime next year and tie on Morocco to that as well.
Miss you both! And still a little jelly that you got to see Gregory Porter! 😆

Many would agree traveling in Taiwan during major holidays or long weekends sucks. First you have to secure train tickets early if taking public transportation, and secure accomodations too if it's a popular place. Accomodations can also be very expensive especially considering what you can get for the same price in Japan. (That's why Taiwanese people flock to Japan after the borders opened last fall.) Then you will see these tourists spots packed with people making it hard to relax and enjoy your time off.
Some would also agree some night markets and some of the "old streets" have become kinda a tourist trap. You'd see similar items and food served at these places. It's like if you've been to one, you've been to all. So you are not alone trying to find places off the beaten path. I think many locals are doing the same.
Since public transportions aren't that great outside of major cities on the west coast, it might be a great idea not to rely on them. For instance, biking around Taiwan seems quite popular these days. Or, making it your goal to hike the top 100 mountains of Taiwan starting from the easiest. Some hikes do require a permit and also entering a raffle to get a spot at the lodge, for example if you want to climb Yushan/Mt. Jade, so you do however still need to plan for those.
For spontaneuos travels to the unknown, I'd say you do need to either drive or bike so you don't get trapped because the last train/bus leaves. Or get a camper van for example so you don't need to worry about accomodations either.

Is there an "off the beaten path" in Taiwan in 2023? There's so many people in such a small island, it's so easy to get around, and you can research everything on the internet. I feel like off the beaten path, pre internet, in places less populated than Taiwan, was great fun.

There are certainly places we have been, like the waterfall we went to last week, that are certainly off the beaten path and have very few visitors, but they are Not necessarily well advertised on social media. That's what we made this request for people to share the good spots if they're willing to share the good spots.
