@@rjyeezy76 Skirt steak where I live is 15 bucks a pound, hardly "cheap". Back in the day it was thrown in with the hamburger cuts. Food Network made every formerly cheap food popular, and now things only butchers and cooks use to know about are too expensive for us peons.

I have one suggestion for choosing the tenderloin steaks that you buy, I have been a meat cutter for like 35 years now. I noticed the tenderloin steaks you used were cut from the butt end of the tenderloin, you should select tenderloins from the center part of the tenderloin or ask your butcher to cut them from the center if you’re not sure. The reason being is that the butt end Of the tenderloin has more fat that curves into the meat in a couple different places and it’s hard for the budget to remove without losing half the value of the steak. they still need to make their money. The center cut is clean or has less fat or no fat around the edge or easily you can cut it off with a halfway decent knife. And the cost is the same. This looks awesome. I'm totally making this next week. It reminds me a of what we call "steak tips" here in New England. We marinate chucks of sirloin or flank (I prefer flank) and grill them. Every restaurant or home cook has their favorite marinade. I like to do mine in a combination of soy sauce, a sweet BBQ sauce and Italian dressing. It sounds nuts, but it's so good. The sugar in the BBQ sauce caramelizes a bit on the outside and the acid from the dressing makes them so tender.
My wife just got me your cook book for my birthday! So stoked. She's one of those who doesn't cook so I'm going to have to show her the part where she's supposed to do the dishes willingly HAHAHA! Would love a garlic press unless you're already out of them. Keep up the good videos!

Same here. I saw a video last year and decided to get one. It's the only way I make mashed potatoes now as well. I found one in perfect condition at a thrift store. I actually see these pop up at thrift stores fairly often. The model I got sells for $32 on Amazon. I got it for $2.

I love doing Steak Bites every once in a while when I want some beef, but not necessarily a steak. I also typically use Top Sirloin since it's generally affordable, it's low fat (but you're fixing that with the butter), and very tender. My only annoyance with it is that it needs a good bit of cleanup to remove silverskin, because no one wants to eat that. The only other thing I would add to what Sam has done is including some smoky paprika. It's subtle, but it's a nice little touch on the steak bites.

Copy Cats IMO, even though I love the show. I only recently found your RUclips channel and have been binging. I used to watch you on a cooking show where you would walk around the set, which I think was your house, and talk to camera guys, dogs, etc... I LOVED that show and am so excited about this channel. Last, your sausage pasta recipe is eerily similar to Guy Fieri's Cajun Chicken Pasta that won him Next Food Network Star, yours predates his by a couple of years as far as I can tell. Keep cussing and cooking and I'll keep watching, laughing and cooking your recipes.
The potato ricer is mostly used to keep the potato starch crystals from popping/activating and making the mashed potatoes gummy. Highly recommend buying one if you like deliciously perfect mashed potatoes.
Wow, this looks amazing. During the first beauty shots in the video of the steak and gravy- I thought that was made of something far more complicated than that butter mixture and the meat juices! Another easy delicious dish for me to cook!

I did steak bites for a party with a couple of thick ribeyes and they were amazing, just with the garlic butter, and I had a couple of simple sauces for dipping on hand. I do like the idea of putting them over some creamy mashed potatoes with roasted garlic and horseradish… nicely done Sam!
My favorite go to guy for simple yet tasty dishes. Cute presentation but you know the steak would be helluva a lot more tender if you just cooked the steak and sliced them into bites afterwards. Could drizzle the butter, thyme, rosemary, and soy sauce on after the bites were cut.
Sam, just made this for my lunch later this evening at work, and took a little bite to taste. Almost didn't make it to work. That first juicy bite was amazing. Good idea.
Finally made this tonight. Had some cauliflower that needed to be cooked before it was too late so subbed cauliflower mash for the potatoes. It was freakin delicious! I love how your recipes are always quick and easy but end up tasting like they took a lot more effort.

My favorite go to guy for simple yet tasty dishes. Cute presentation but you know the steak would be helluva a lot more tender if you just cooked the steak and sliced them into bites afterwards. Could drizzle the butter, thyme, rosemary, and soy sauce on after the bites were cut.

Finally made this tonight. Had some cauliflower that needed to be cooked before it was too late so subbed cauliflower mash for the potatoes. It was freakin delicious! I love how your recipes are always quick and easy but end up tasting like they took a lot more effort.
