I can’t speak to Cecily’s accent (hers sounded genuine to me, but I am far from Irish), but I definitely don’t think Irish people sound like Kate, Aidy, Alex, or Kyle. Those were sad.
And given that Saoirse really is Irish, well. I don’t think I’d be THAT shocked.

One of my brothers went to Ireland with a cousin, and some girls made a gesture he didn't recognize. Later he learned it meant that she wanted him to come into her three times or something like that.

It looks like a play on Irish stereotypes but it isn't. It is nuts and bolts comedy that shouldn't be looked into deeper. The cunnilingus joke at the top was hilarious, it had nothing to do with Irish stereotypes. It was funny because you could see the punchline coming from a mile away and you're waiting for the one on the left to blurt out "cunnilingus."
SNL has a very academic approach to comedy and expects a lot of the audience. SNL is asking the audience to suspend disbelief and view everything through the lens of pretend Irish stereotypes. When you're properly suspending disbelief the bad accent of the pilot becomes 10 times funnier than if the accent was good, you're following along with the routine and the performance is what makes it funny.
