When panning or using the Gorilla for panoramas, I use its ability to rotate the head relative to the tripod.
The trick is to tighten the clamp screw enough to grip the ball head and prevent the camera tilting, but not too tight to stop the head rotating. Then grip the top of the legs with one hand while using the other to turn the head with a bit of thumb pressure on the clamp screw (don’t try to move the camera directly).
