Shredding Zucchini for Future Zucchini Bread

We love zucchini bread and now is the time to get the shredded Zucchini in the freezer. We did not have a good year for growing squash but we are thankful for a coworker of Jeff’s is made it possible for me to put some in the freezer this year.

Thanks for sharing. I love making zucchini bread! I've never thought of freezing zucchini. Once thawed, do you drain off the water to make zucchini bread or do you just throw it in the bowl with the juice?

No I don’t drain it. The recipe usually says to add it to the bread. It needs the added moisture 🙂
