Thanks for sharing. I love making zucchini bread! I've never thought of freezing zucchini. Once thawed, do you drain off the water to make zucchini bread or do you just throw it in the bowl with the juice?

No I don’t drain it. The recipe usually says to add it to the bread. It needs the added moisture 🙂

It is a super easy way to preserve them. Zucchini bread at Christmas time makes great gifts too!
