I make a very similar soup on a regular basis. I grew up on this stuff. My mom would "can" all the fresh veggies from the garden in the same jar. Then when winter came, all we had to do was brown the ground beef and open a jar of the canned soup mixture and just simmer a few minutes.. so good! Believe it or not, a peanut butter sandwich is great with this soup.

My mom fixed it often. She had eight children to feed. I made it for my family. It was a favorite. That soup literally kept us from starving. It was made every Saturday. I called it mustgo, all leftover veggies from the week. Most people throw out the spoon or two of veggies leftover out of weekly meals. I had a container in the freezer for those leftovers. On Saturday it was all made into soup. It’s a great comfort food.
My mother taught me how to make this. Me and my family love it a lot. Very good for the winter for a hearty soup. Sometimes I use spaghetti sauce or alfredo sauce. Either way it comes out very good❤
