    The way what you cook Mutton by adding spices with interval of 5 mins cooking is new idea for me...and in the last straining the curry is quite good idea.....!! Wonderful....I loved it....!!

      Thanks. In most of the five star hotels they always strain meat gravy to remove dry spices and residual to make it more refined and smooth..they add extra effort that is why they charge 10 times.

    This looks wonderful... it's a kind of cross between 'mangshor jhol' and 'kosha mangsho' from Bengal .. But this is definitely a must-try on my list

    बर्तन बड़ा होने से वाष्पीकरण की प्रक्रिया कैसे ठीक से होगी
    भुनाई तो अच्छी होगी मगर ढकने के बाद वाष्पीकरण कम होगा ।

    Audacious but not easy however This is the only video I found on YT which is very close to authentic recipe of Rogan Josh.
    Other channels cooked it in pressure cooker and called it authentic. 😁

    I agree with Chef Ashish, this is Muslim style Rogan Josh. Pandits don't use onion-garlic and use Hing/Asafoetida instead. Neither uses tomato in Rogan Josh, yogurt is used exclusively as this is a very heavy dish with lots of oil-ghee-spices and yogurt brings down the temper and gives amazing taste to this dish. I like the part where Chef used Lichen during tempering, that's the twist I guess. I've never used Lichen in Rogan Josh but I can feel how it's going to add the unique earthiness to the dish like it does to the Biryani that I make. Thanks a lot for sharing the recipe and also make the Pandit-style Rogan Josh to keep the haters away :)) Hehehehe

      only concern is that you have used most of ribs part ..in Roghanjosh you should use hips part as it has more meat in it.

      You are right....tomato, onion and Garlic generally not use in Roganjosh..... Generally quantity of ginger juice remain in higher side....

    I will try this next time. I use to make in Punjabi style with ghee and all the masala you used and it is very similar to your style but in the end Ratanjot was something I never tried.

    Instead of musterd oil can we use any other cooking oil. And I want to ask can we avoid ratanjot. Because it is not available in local market.

      Yes you can use either refined oil or desi ghee. It's ok to avoid ratanjot. Anyway it is only a color agent.

    What is Kalpasi and Ratanjot? And What do these spices do? Do we get these spices in Delhi? This is for the first time I have come across these spices. Will surely try this recipe.

      Kalpasi is a herb which is also known as stone flowers. It is available in Delhi. You can check in local spice market and also available online. Ratanjot is a natural color agent. It just give a nice red color in the gravy. Mostly used in Kashmiri cuisines.
