This is, hands down, the best butter chicken I have ever eaten, never mind that I have cooked. Cooked this for family tonight and some felt it was the BEST CURRY we have had (and we have had a few, I can tell you) Shamza I think you are phenomenal. Did the keema rice too which was outstanding x
Butter chicken is the best entry dish for anyone new to Indian food. I sometimes cheat a bit by getting some high-quality Italian Passata (preferably Mutti) and blending it with some blended cashew nuts, and just dump it into the pot after sauteeing ginger/garlic paste, deseeded green chili, along with kashmiri chili powder, cardamom powder, mace powder and cumin seeds powder. I also add some honey, and kasoori methi for that extra punch. Sometimes, I also add left-over roasted tandoori chicken to the mix.

Did you simply add in cashews at the start and then blended everything in a mixer and passed through a sieve? I assume this adds a level of richness to the sauce?
@@cheddarUSA1 yes that is exactly what I did. I blended it in a Vitamix and didn’t have to pass it through a sieve. I found it to be very smooth and rich. Probably my new favourite dish.

Butter was added along with the base ingredients. Oil was reserved for frying the chicken in. Each frozen garlic cube equates to 1 tablespoon of the paste or puree. So I used 2 garlic and two ginger cubes, so you'll need 2 tablespoons of ginger and 2 tablespoons of garlic paste if you've not got the frozen cubes.

Degi mirch? its similar to Kashmiri chilli powder, if you can't find degi mirch you can use kashmiri chilli powder I think most asain supermarkets will sell either of those.

I'm searching for a recipe to use with cooked meat (yes, its the turkey). I have tried marinading cooked meat but the spices don't render and cook the same way. I have turkey and veg stock that I can use to add some moisture, is there anything else I can do? Otherwise take add all the spices together and cook them out? I'll toy with adding some colour to the turkey pieces in stock.

I'm afraid I haven't cooked with turkey ever so I am unable to comment on what it would need to elevate the flavour more. I know once my hubby made a curry out of chicken that I used to make chicken broth and I can tell you it was bland & flavourless. In my humble opinion once meat is cooked and we try to re create another dish using it, it's pretty pointless as all the flavour has gone into the first cook, you're never really going to get that flavour.

Single cream or coconut cream which will alter the taste.
Try adding raw cashew nuts (like 13-17 pieces) along with the onions, tomatoes and the rest of the ingredients.

I tried this an unfortunately it tasted mainly of ginger and kinda ruined the butter chicken taste, I done others without and problems. 😢
