    Loved the cuttar chat..sweet,sour. The making of mint , nuts pickle was a great bonding activity between a gran and granddaughter. The child would add the ingredient whilst gran used the grinding stone. Her reward...the first taste!

    • @GaithreeDeviLuckan
      @GaithreeDeviLuckan  3 года назад +1

      And that first taste was off the grinding stone itself!

    I think this method resonates with a lot of South Africans of Indian descent! We have all made this at some time or other.. Also tossing the nuts to separate the peels! As a kid, I loved doing that in order to stuff as many roasted nuts into my mouth at every opportunity 😁. Jhb, South Africa

    • @GaithreeDeviLuckan
      @GaithreeDeviLuckan  3 года назад +5

      Yes you have to start with double the amount of nuts actually to account for all that gets eaten before its time to make the chutney even!

    I'm trying not to binge watch Aunty tonight, because I don't want to watch all, and wait for the next upload. So I'm keeping some vids in storage🙃 What I can say is, I really appreciate all that the Indians have brought to our RSA table. I'm coloured, in Durban, and my great grandfather was Indian. So there's not a week that goes by without Indian food! I actually get depressed if there's none. A person can feel something missing🤪. Our forefathers and mothers have brought abundant medicinal, culinary and industrial botanical plants, and cultivation know how, to use in this country. I'm grateful to all of you that now I know. I shouldn't, and will not starve to death in RSA! 🇮🇳🇿🇦💞🥂

      We posted the roht recipe to the community page. Here is the recipe, we will not film it for the channel as we got some very negative comments when we showed the hulwa recipe:
      We did roht and halwa puri prayers today (in the rain)
      Here is the roht recipe once more if you missed our previous post.
      5 cup flour sieved
      1 cup castor sugar
      1 cup melted butter ghee
      1 tsp elaichi powder
      1 banana (optional)
      Approx 1 lt cold milk. Start with 1 cup and add milk gradually until you have a dough that’s softer than roti finish. May not require full liter of milk so add slowly.
      Deep fry in ghee
      Makes approximately 20 Roht

    • @GaithreeDeviLuckan
      @GaithreeDeviLuckan  3 года назад +1

      Mint doesn't keep well in the fridge - it goes black. But if you making it and eating it in a shorter period of time then mint can definitely be added.

      The best to keep it for longer is split the nuts chutney into smaller quantities, keep one container in the fridge to eat and freeze the rest. Nuts chutney freezes very well and you can then take out and use whenever you run out.

    Auntie Thank You so much for this yummy recipe 💖, I so long wanted to learn to make my own. I just never knew there is black and Brown Tamrind
    how do I tell that when buying? I think I only have black one 😔 Also may I please ask are you using fresh uncooked peanuts for roasting or can one use any plain uncooked peanuts other then fresh that need to be shelled?

      The tamarind packet will be labeled as black or brown tamarind. For the peanuts we buy the fresh uncooked nuts.

    How do you preserve the nuts chutney? Regards, Ravi

    • @GaithreeDeviLuckan

      We portion into smaller containers and then freeze the nuts chutney. A couple days before we want to eat it we defrost individual containers and then keep in the fridge

      It doesn't stay for very long out of the fridge and will spoil quickly.

      You can divide into smaller quantities and freeze. It freezes very well. And then you can defrost as you use it

      The nuts chutney freezes very well so you don't need to braise to preserve - you can pack it in smaller containers and freeze them and when you ready to use you can defrost a couple days ahead. Braising can be done, but you have to be very careful with very little oil, and an onion and mustard seeds. Then cool before adding to the nuts chutney. However the oil does tend to stay at the top and not mix into the chutney fully...
