Portuguese Style Chicken Recipe

  • A great dish to eat hot or cold, to take to a picnic or to eat with friends for a simple lunch or dinner. Thanks to Donna Hay for the recipe.
    Portuguese-Style Chicken Drumsticks
    1 TBS smoked paprika
    1 TSP Cayenne pepper (Milder option: cut the cayenne to ½ a TSP)
    1 TSP ground cumin
    1 ½ TBS dried oregano leaves
    ¼ cup extra virgin oil
    2 TBS red wine vinegar
    1 TBS brown sugar
    Salt and pepper
    3 cloves of garlic, crushed
    12 chicken drumsticks
    2 slices white bread
    ½ cup water
    Preheat oven to 230°C
    Place smoked paprika, cayenne, cumin, and oregano in a bowl, add oil, vinegar, sugar, salt & pepper and mix.
    Add chicken legs to another bowl and add garlic and ½ of the marinade.
    Place in a baking paper-lined tray and cook for around 15 to 20 minutes, checking that any juices run clear.
    To make the sauce
    Add marinade, torn up bread and water into a small food processor, and combine. I heated it but it’s not necessary.
    Serve the chicken with sauce and couscous salad or a salad of your choice.
    Couscous salad
    1 cup of couscous
    1 cup boiling water
    Extra virgin olive oil
    Salt and pepper
    Selection of vegetables, (around 1 ½ cups in total)
    I used bottled capsicum, zucchini, olives, chopped parsley, spring onion.
    Toss altogether and dress with salt and pepper and olive oil to taste.
    Bottled artichokes, steamed green beans or broccoli, sundried tomatoes are also good in this salad
