If you're really adventurous, you could attempt using high extraction flour for this cake. To whiten flour in ancient Roman times, wholemeal flour was sifted through increasingly fine sieves to remove most of the bran. The result was somewhat similar to modern high extraction flour.

Whereas the Medieval source you mentioned saw little nutritional value and even that it may cause dis-ease within the body if not cooked. As I'm vegetarian I will try the soup without the pork.
