- OUR GREAT BRITISH BAKE OFF AT HOME: Things you can do while staying home// Hello lovely people everywhere, With things happening out there, basically all of us have to stay home as much as possible which is definitely not easy. This is the time to think about taking up a new hobby, read new books, watch favourite series, enjoy cooking or bake a cake once in a while. This is what we did again yesterday. We made a gluten free Battenberg cake, a very popular British cake. It didn't turn out perfect but was made with love and it took our mind off things for some hours which was great. We are thinking of all of you, let's stay connected during these times. Please be safe everyone. Kirsten & Joerg x

RECIPE GLUTEN FREE BATTENBERG CAKE:
Ingredients
175g (6ozs) butter or margarine
175g (6ozs) caster sugar
175g (6ozs) self raising gluten free flour (or regular flour)
Few drops of pink coloring
About 3 tbs apricot jam (or jam/marmalade you have a home and love)
350g (12ozs) marzipan
Method
Pre-heat the oven to 180 C (350 F) Gas mark 4.
Assemble, grease (with block butter or margarine) and flour the Battenberg pan.
Cream together the butter and sugar until light and creamy.
Gradually add the beaten eggs.
Fold in the flour.
Divide the mixture into two equal halves.
Put a few drops of pink food coloring into one half of the mixture and gently mix until an even colour is achieved. Spoon the pink mixture into two sections of the tins and the plain mixture in the the other two sections.
Place in the centre of the oven and bake for approx. 30-35 minutes, or until evenly colored and firm to the touch.
Allow the cake to cool in the tin. If the cake has risen above the top of the tin, use a serrated knife to cut across the top to remove excess cake. Remove the cake from the tin.
When completely cold, brush the apricot jam (or the jam/marmalade you chose) onto the long sides of the cakes and join one plain and one pink slice together and then one pink and one plain on top creating a checkered pattern.
Now brush the jam over all the long sides.
Roll out the marzipan and neaten the edges. Place the cake onto the marzipan so the one edge is lined u to the edge of the marzipan and completely wrap the marzipan around the cake. Trim away any surplus marzipan and to make a neat cake, just trim both ends with a clean knot.

I agree, using loose tea is kinder on the environment, as many bags don’t biodegrade, and they are not necessary anyway. Your tea looked lovely. What a nice way to spend some ‘quarantine’ time!

I was stunned when I discovered most tea bags had plastic in them (sealed, I believe with plastic). Loose tea now!
And loose tea steeps better and the flavor comes through. The ceremony of tea with selecting tea, teapot, cups and saucers, and the food make for a life well lived.
English and Irish heritage on both sides, so you know what I drink. My mother called it the "Nectar of the gods". I love steeping loose tea and in the winter, back in bone chilling Chicago, I sometimes loved flavored teas for the aroma. Now in the mild wintered Phoenix area, I still love my tea on our (wink, wink) chilly nights.
I like that you make things, as simple as cake and tea, into an occasion. 🍰 ☕️

Five years ago we met a lovely couple on a river cruise, who are from Birmingham. We became fast friends and continue to be to this day. We were so lucky because they invited us to stay with them two years ago and my heart jumped because I am SUCH an anglophile!!! Their house was everything I wanted it to be, gravel driveway, perfect English garden, a gorgeous atrium which was perfectly warm on the chilly nights, but the best was our hostess is a wonderful baker. She made an amazing Victoria Sponge, a Battenberg cake, and that was just for our arrival. They were the perfect hosts and took us everywhere. My English dreams all came true in that one trip. I know I sound like a school girl...but I don't care.
We appreciate you and Joerg more than ever now. Please keep filming and posting whatever you can!

To never have a dry cake again: While cake is still warm brush it with a simple syrup....it always works...( bakery & chef secret) you can go on line & choose a simple syrup recipe...love you ‘2’. Eating breakfast (pancakes ) in Seattle right now

Yes, that is the best advice someone can give for dry cakes and simple syrup is so easy to make and store. I like to infuse mine with citron. Great addition to cocktails too.
Baking with applesauce instead of butter or oil adds fiber and reduces calories in cakes, muffins, and breads. And, because of its water content, applesauce will also keep your baked goods moist and fresh longer. (Something to try if interested) I clipped this from the 'net.
@@pollywog7318 never substitute butter with applesauce. Oil is okay if you are going for a healthier cake (make sure to use less sugar as applesauce contains sugar) but applesauce cannot replace butter. Use applesauce only if you are looking to lower the fat content in a cake but I wouldn't recommend using it to make moist cakes. Simple syrup is your best bet.

My husband picks up the groceries I preorder on line and I am socially involved on line only! Kirsten girl... if only it would be stockpiling! This is couscous I bought when I was determined to be vegan... but I’m not. It’s saltines that are rancid after not being eaten in a year. It’s lentils from my vegan attempt... eating habits are so hard to change! I’m grateful for the time to clean and purge.

Lovely to see you both. You bring a smile to your utube friends! A tip for making tea, pour a little boiling water into your tea pot and leave for a few minutes. Heats right through the ceramic, adds a better taste to your darjeeling loose tea, and keeps the pot hotter for longer. Hmm, lovely. Can you knit? 2 little tea cosies would be a nice addition to your beautiful eclectic mix. Looking forward to your next video.

I LOVE your baking video's. You show us common house wives things that are so easy to do , and yet so delicious. We KNOW they're delicious because your husband always says so. These video's are very entertaining, keep up the good work!

This has been a fantastic video, many thanks for putting it up. I like these home videos, they are perfectly fine. We all understand the need for isolation in these times. However, there is one thing that my husband and I will be doing and that is going out into the countryside for a walk. I feel the need for this. I am so glad that you made the Batternberg Cake as I had never seen a cake tin like that before and so I will try and get one as soon as I can. Keep up the good work with the home videos. I am looking forward to your next home video, I would like to see your home as you decorate it, I find it fascinating. Love from June and Andrew.

Dear Kirsten and Jörg, Wonderful to see you! And I enjoyed learning about the cake! It looks a bit complicated with the different sections and special frosting but it was pretty. And I really enjoyed having tea with you. I love your teacups and the moo cow creamer. I remember when you got that. Here we have been "sheltering in place" for a couple weeks now and Wednesday begins the "lockdown." It is difficult to know what the result will be. Some places are so badly stricken, like NYC, Washington State, San Francisco. Other areas, Ohio and Pennsylvania, seem to be alright so far. Well, thank you so much for sharing your lives with us! Thanks so much Karin! Yes, it's a bit tricky to make but we have more time on weekends now due to staying in. We are on lockdown here which was the best decision since we had to many people walking around not taking this seriously. It's hard for all of us we have to try and stay positive. Be safe.

Couple of suggestions, next time warm up the jam just a little, it will be easier to spread. Roll the marzipan between two sheets of parchment or waxed paper with the icing sugar which helps you roll it even thinner, and then use the paper to help mold. If you spread a very thin layer of your mascarpone spread around the sides, the marzipan will stick and not pull away. Brilliant to keep the cake in the pan to evenly cut the cake straight. You did a wonderful job and the cake looks delicious.
