"Get dirty" that's nice to hear. Until right now, I thought I was the only one who put mud in my food. Worms are protein, grass is green so that's a vegetable and mud has water so its basically perfect with all the food groups.
I don't have a convection oven but I would still try this. Might try a few variations the more I make it just to keep it interesting, like a southwest version with bell pepper and sausage and Mexican cheese, etc. Lots of yummy possibilities. 👏👏👏

I made something similar with cooked breakfast sausage, green onions, red/green pepper. I used shredded hard cheese and Vermont cheddar shredded and added 1/2 & 1/2. All dairy was lactose free. Also added some garlic and onion powder. If you are worried about bacon not crispy just cook ahead and crumble on top.

My oh my…..scrumptious!!!!! I love my breakfast and make similar casseroles….I do like green and Red bell peppers 🫑 in mine….I was surprised how crispy the bacon came out………ty for posting ❤
I make a quiche with the same hash brown crust that he does but I don’t use cornstarch. I do use an egg as a binder and add a bit of fine grated onion. I find that blind baking prior/before adding your filling will help it not to get mushy and you’ll have a crispy crust.

I also used an entire stick of butter because I wasn’t going to count on bacon grease. I half pre-cooked the bacon in the microwave but casserole was still full of grease on top after cooking. Used paper towels to soak it up. Most important, use a metal pan and not a glass pan. Our glass pan prevented the potatoes from getting crispy. Next time, I’m going to pre-cook the potatoes. Overall, this was pretty tasty.
Frozen potatoes should not be defrosted before cooking … check the bag, it will tell you to only cook from frozen… you will get a higher chance of food poisoning.

An air fryer is a convention oven too
Just at the last few minutes open oven a crack and crank the broiler to crisp the bacon. Watch closely
What I am going to try is to pre cook the bacon on a tray for 10 -15 minutes first.
But can you cook this in a regular gas oven????
