  • In today's video we are cooking up some easy smoked armadillo eggs on our Pit Boss Austin XL. If you have never had smoked armadillo eggs, you are really missing out! They are absolutely delicious, and so easy! Whether you want smoked armadillo eggs for dinner, your next party, or for a delicious game day snack, I promise you this will be an absolute hit!!
    *****************************************************************************
    Things you need for smoked armadillo eggs:
    -Jalapenos
    -Pork sausage of your choice
    -Cream cheese
    -Shredded cheese of your choice
    -Bacon
    -Sweet rub (SuckleBusters Honey BBQ)
    -Sweet BBQ Sauce (SuckleBusters Honey BBQ)
    *****************************************************************************
    How to prep:
    -Cut stem off of jalapenos and remove insides
    -Mix together cream cheese and shredded cheese
    -Stuff cream cheese and cheese mixture into jalapenos
    -Wrap sausage around jalapenos being sure to seal the jalapenos entirely
    -Season with sweet rub
    -Wrap bacon around the sausage
    -Season with sweet rub again
    *****************************************************************************
    How to cook:
    -Smoke at 250F until internal temp of 165F and bacon is done
    -Glaze with sweet rub, and let the sauce set for 10-15 minutes
    -Let rest 10 minutes, slice and ENJOY!

    I watched a lot of videos before attempting smoked armadillo eggs and this was the version I chose to follow - they turned out amazing by the way!!! I appreciate the clear, concise direction with comments on why specific things are done, and there's not a whole lot of extra talk that doesn't mean anything. The video is also well edited and doesn't waste your time watching too much of the prep. Two thumbs up!

    Made these a few times. Added crispy bacon with the cheese mix. When wrapped in bacon i let it go for 30min till it shows crispy then give it a maple syrup coat and some a siracha and bbq mix coat. Its a winner at every bbq. I dont have a smoker using the weber kettle.

    Yeah my first go around was iffy. I used thick bacon and it didn’t quite crisp up the way I wanted it to. Next time I’ll use a much thinner bacon. The flavor was still amazing but I think a crispy bacon would really make this dish over the top. That and maybe using peppered bacon. One last thing I personally would do next time is leave more of the seeds in the jalapeños. I like a little more of a bite. Made enough for some friends to try and they loved them. Definitely something I’ll be making again and again.

    I tried these they were so good. Wife said don't use spices to do them that was a mistake listening to her. I used spices on my two and bbq sauce holy smoldering cow.

    That's how we do our poppers except we pre cook bacon in the oven and cut it up in the oven and mix it in with the cream cheese and stuff it into the jalapeños!

      from Google: "They get their name because when they are wrapped in bacon they resemble an armadillo's tough exterior shell and for the fact that they are similar to the famous Scotch Egg"

    Looks amazing. What do you think if you put a pc of shrimp inside and did the cheese with the sausage like you did. Leave the shrimp tail sticking out. Just curious on your thoughts.

    Chop those jalapenos in half lengthwise. Easier to de-seed and that lets you put as much cheese inside of them as you want, grab a big handful of cheese and smash it into one half, then put the other half on top like an ice cream sandwich. Your welcome ;)

    Outstanding video and channel. Just bought a Pit Boss 850 and looking for some easy starts. This fits the bill. Checked out a few of your other videos and they were equally impressive. Combining outstanding video techniques with your obvious skill and love of cooking is unbeatable. I have a question for you and/or other subscribers. I will need to prepare these pretty far ahead of an out of town party. So, I will need to refrigerate them for 4 to 6 hours prior to serving. Do you think simply rewarming in the microwave would hurt the texture or taste? Thanks again!

      I've reheated them in the microwave, and they are good. But not as great as fresh as the bacon gets a bit soggy. What I would do is reheat in the oven on a sheet tray and then maybe broil them for a bit to crisp back up the bacon. An air fryer might work too?

    Is there any heat? I find many times Jalapenos are hit or miss once they are cleaned out. Should I leave some seeds in or add some powdered cayenne to the cheese mix or some pepper flakes.

    Great job! Although I had to laugh at your "delicious" face. We all know that there is no way those don't taste awesome. I have only seen one chef spit out some thing that they made in disgust, and it was because the Benoit mix was expired.
