    Crispy, juicy, this chicken is a favorite of all Filipinos. Who doesn’t know (and love) the house that fried chicken built, Max’s? Even Filipinos abroad crave Max’s delicious fried chicken that can not be found anywhere else. But guess what! Now you can easily replicate that same crispy, tender goodness in your own home. Yup!     INGREDIENTS
    3 chicken leg quarters
    cooking oil, for frying
    For the marinade:
    6 tablespoons Datu Puti Patis
    1/4 cup calamansi juice
    For the poaching liquid
    4 cloves garlic
    1 onion, quartered
    3 bay leaves
    cracked black pepper
    salt
    water
    For the dipping sauce:
    3 tablespoons Jufran Banana Ketchup
    2 tablespoons Old English Worcestershire Sauce
    1 tablespoons Jufran Hot Sauce
    sweet potato fries, to serve

    Niluto ko po yan last night and family approved! I just put chicken cubes sa poaching liquid just to enhanced the chicken taste. And for the dipping we did our favorite combination of banana catsup and worchestire sauce just like when we eat at Max's.

    I did this for lunch. Di ko sinabi sa family kung anong gagawin ko sa chicken wings. But I did great. Sinabi ni ate na parang Max's daw. So dun ko sinabi sa kanila na yun talaga yung gusto ko maachieve. Thank you!!

    The technique and the ingredients make sense when you recall the history of max at the end of world war 2. Brine and high salt to prevent bacteria growth and simple ingredients still available in the ashes of the war. I followed the recipe except I fried the chicken in my air fryer. Less mess same results and very very good. Three leg quarters cost me around three dollars here in the US. Max’s here in my city charges almost fifteen dollars for a whole chicken. Two whole Chickens in my local grocery costs about half the price. Thanks for the video and the tips.

    add ko lang, yung pinagpakuluan ng manok nilagyan ko ng luya and dahon ng malunggay tapos ginawa kong sabaw.. masarap na masustansiya pa.

    Di ko alam parang pang Maxs pala yung matagal ko na ginagawa lol. Pero yung akin ay ibinababad ko muna chicken sa mixture ng patis, salt, pepper at kalamansi. After nun ay pinakukuluan ko muna yung chicken sa plain water ng sait hanggang mawala lang yung pink color bago tanggalin sa water at i pat dry ng paper towel. Pag dry na dun ko na sya piniprito. Mas mabilis sya i fry pag ganito dahil luto na yung chicken from boiling at naiiwasan yung pinaka ayaw ko na sa labas ay luto na pero hilaw pa yung loob. Ang kinalalabas ay golden brown at crispy skin fried chicken na may tamang alat lang yung chicken. Di rin ako vumagamit ng coating ng flour. Advise lang na iwasan lang ang sobrang pakulo ng chicken dahil nagiging parang goma at malitid sya kung nasobrahan sa pag boil or poach na tawag nyo. .
    para maiwasan yung fried chicken na hilaw pa ang loonb. xi ko lang alam poa hing pala tawag

    I just tried this today and I have to say WOW ang sarap! Nanuot talaga sa luob yung lasa, juicy and and perfectly crispy yung skin. Naghanda ako ng sauce pero halos hindi ko na gamit kasi no need na isawsaw.
    I was about to try the recipe of another famous Filipino cooking channel pero maraming ingredients na wala sa kitchen ko. Buti nalang I tried yours. Thanks!😋

    I remember my mom's homecooking! I love this style of fried chicken... less breading and you can enjoy the more natural flavor. I love your recipes chef!
    By the way, so as not to confuse the viewers... worcestershire sauce is actually pronounced as wu-ster-shir and not wor- ces-ter-shayr.

    A healthier option is to use an air fryer
    15 mins at 200c is basically the same result
    I even placed some in my freezer for later use
    I air-fried it from frozen (added 5 mins) and same crispy result
