This video was absolutely incredible and a food experience like this is one of a kind. This place or another like it is definitely on my bucket list.

Mackerel would seem to have a gamey taste to me although I never tried it in a sushi dish, might be up to the knowledge of the preparer. I’m sure I would have enjoyed it. Thank you.
The Spanish fleets fish Scomberomorus scombrus in Scottish and Norwegian waters. It may be that this isn’t the species served but it did look like it as it is the only species of Mackerel with such defined stripes with is readily sold and served in Japan.
Atlantic Mackerel S. scombrus is called Saba in the Japanese market.It is considered the best quality because of its high oil content and very low mercury content. www.clovegarden.com/ingred/sf_mackaz.html
Sushi would not be my first choice in Japanese dining. Tempura or Yakatori brochettes win hands down over sushi. I also like their miso soup too. I tend to think the Japanes are obsested with raw fish. Interesting that they don't do Steak Tatare which would be a classical Japanese preparation.
Cool chef !!! Well, you sure got what you paid for, Top notch Quality. How did it compare to quality sushi in Japan? 50 years of Japanese colonialism certainly puts Taiwan ahead of most other Asian cities, as far as Japanese cuisine.
