  • ABOUT THIS VIDEO:
Recently, I made a video of what I eat in a day as a minimalist.
Then, many people would say things like,
    "I like traditional Japanese food".
So today, I would like to try making traditional Japanese recipes from morning to night.
Thinking about traditional Japanese food, I referred to the usual meals eaten in 1975.
In 1975, Japan was said to have the healthiest and most nutritionally balanced diet.
So, today I'm going to recreate recipes from that year .
In the past, when people used to cook in a kimono, they would wrap strings around the kimono, so that sleeves wouldn't get in the way.
    So, let’s get started!
    WHO AM I:
Welcome to samurai matcha journey! I'm Aki, a minimalist, kimono style school teacher in Japan. I make videos about my usual life in really country side of Japan. You can enjoy beautiful scenery, learn about Japan, and pick up some interesting lifestyle tips.
    WHAT I LIKE:
    Minimal lifestyle
    Matcha
    Kimono
    Anime(Ghibli)
    Japanese food
    RRODUCTS(Amazon USA):
Many people have been asking me how to buy things that I use,
so I tried to find products that is the same or similar to my items on amazon in the USA.

I was compelled to try natto after learning about it several yrs ago, but I was mainly interested in for its nutritional information. Yes, it has an odor, but I think some of my fellow westerners exaggerate a bit. As for its flavor, it just taste fermented, but when you mix it with rice and egg it was very tasty. I am very pleased to have tasted and enjoyed natto 🙏.

Thank you for sharing! Your comment on slurping reminded me of a business trip to Japan where my host told me (as we were about to eat soba) "It's OK to make a sound!" I appreciated his kind comment to allow me to excuse myself from Western manners when enjoying noodles!

Hello Aki. I have recently watched all your video’s and it has inspired me to better my life in many ways. I’ve started to gradually transition to minimalism, I use my phone less, I’m conscious of my spending. Just one more thing I want to better in my life is my health. That’s why I want to ask you if you’d ever consider making a video about the way you train? Again, I really enjoy your video’s. You’re a funny and optimistic person.😊

Big shout out to this video. Since watching this almost a year ago, I always have Dashi, miso, soy sauce, seaweed, tofu, udon and mirin in the house. I make it routinely and love every bite. Would have never happened if it wasn’t for this video. Changed my life for the better. Genuinely, thank you

Just an idea to help with cooking. just try eyeballing instead of measuring every ingredients it will help with minimalizing dishes and help save time and be more relaxing. instead of a teaspoon of salt just do a few pinches of salt using your fingers. with cooking you don't need to be exact. :)

I just watched this video and I agree with your sentiment about moms cooking these meals - its a lot of work, but for the benefit of the family.
I think in the modern era, it would be ideal that one partner in a relationship could stay home and cook healthy and fresh meals for their family every day, while the other works. I love to cook, and my wife and I often discuss whether it'd be better for me to stay at home and care for the house. Would save a lot of money and be much healthier!
Thank you for the introduction to these classic meals, I need to give making these a shot :).

My husband has a very demanding job, and I’m unable to work full-time because of epilepsy. But I think our situation has a positive side - we eat very healthy meals because I have time to cook.
When I have a seizure-day, we tend to eat convenience foods like frozen pizza, which I don’t really like 🥴

As a Dane, western guy, you have inspired me to actually try to live slightly Japanese by choice of foods. Mainly for health purposes.
I have a daughter, she's almost 2 years old now, er don't need very nutritional, and i also feel it begins to take a slight toll on my own body for all the missing nutrition, aswell as somewat more stressed out as i don't respect the kitchen enough, so it easily becomes fast food.
I know its wrong, and i want my daughter to grow up, knowing that nutritious and delicious meals, actually can be one of few keys to a healthy mindstate. I've always been looking towards the Japanese world for their body type and how they eat, but its usually a hard world to search up upon, as i mainly get so many recipes for deep fried noodles and fairly greasy ramen types. Which we all know isn't exactly healthy.
You show small simple components and turn them into balanced, nutritional and delicious recipes, and i simply will try to emply it on my family.
Thanks for your videos and thanks for you!

Yes, it can be difficult when you don't know what you need, what items to shop for, or which items are available in your location: the US, Canada or other places. My transition into Japanese cooking was a long one. I would recommend that you do some research on the condiments, the foods, and then the recipes. Ask your husband what he enjoys most. Then pre-make some of the foods ahead of time and label them and put them either in the refrigerator or in the freezer. The more you practice the better it gets.
      I would recommend Honeyjubu's channel ruclips.net/video/h_CIhXs9QA8/видео.html
After finding her channel I thought "What a blessing! I wish I had her guidance back then" Although her kind of storage and pre-making foods is for a large family. You don't need to buy a bunch of things as she does. I wish you all the luck and I hope you enjoy cooking! 💕💕
Edit: I took the longer path because I am vegan. And I had to replace certain things from the recipes to make it edible for me. And most stores didn't carry most of the condiments I needed, had to buy some things online, still do, the company is very happy and gives me discounts.

I sure miss Japan. Studied abroad there back in 2011-2012. I'm back in the states now and sometimes I make traditional Japanese food cause I miss it. I hated Natto at first too when I tried it; swore I'd never eat it again. But after moving back to the states, I found myself missing it for some odd reason even though I only tried it once. I've been eating it regularly since and there's always at least one pack of it in my fridge.

    1) Your American friend enjoying seaweed in vinegar is not that unusual. Lots of people in America eat boiled spinach or collard greens in vinegar, so that's probably pretty similar in taste and texture.
    2) How do you bake a cake in a fish grill, or do you have some other kind of oven?

When I was younger I used do my own fishing. And I would clean it and take the scales off. Putting the water in the kitchen sink and adding about a tablespoon of white vinegar will help get rid of the slime. But I put the fish in the frying Pan and cover it up with water. And I add some salt and I boil my fish gently until the fish comes apart with a fork. It's so quick. You can put the lid on the pan to help cook it. But you should never have a rapid boil.

Natto is probably the richest source of vitamin K2 on the planet. I'd love to try it, living in Europe I have no idea where to find it. Chinese supermarket doesn't have it and I've never found a Japanese supermarket.
