    What's the point to dry AAMLA with kitchen towel, eventually u boiled them in water....if u steam them, then there will be some logic...

      The amla (goose berry)is wiped dry as the water on it is tap water.If not wiped dry it can grow fungus!
      Incidentally Wiping dry with kitchen cloth/towel the washed amla lemon mango etc is a usual procedure in most Indian pickle recipes !

      We r not using chillies for mango ,actually two three methods are there.
      We r from Konkan, I will show all when mangoes will start to come.

    I did not pat dry the berries and after a week I found fungus floating on the water. Can I eat these berries after removing the floating fungus?

      I think putting in boiledcool water is different from only water so it won't get spoiled

      Because Amla is not boiled heat is turned off before adding them drying amla will keep away fungus formation

    Amla loose crunchy ness after one month.wrong claim of durability for one year.It’s best to finish in one month

      You can use 1 or 2 laurel leaves or 1 tea bag in the cooled brine, the tannin keeps the amla or whatever you wish to ferment to keep their crunch for a long time 👌

      the salt solution (brine) is devoid of any bacterial contamination, so you need to make sure the amla is dry to prevent any fungus or mould formation. you can also sun dry the amla of you prefer. hope this helps.

    Hi I made amla in brine as per your youtube video..but there is fungus.
    Your video said we can store this outside for months. Only difference was that u added Chillies and I did not..maybe that's the reason?

    Can we also consume the brine? I assume that the nutrients from the Amma would have gone into the brine to some extent. But it may be too much salt to consume

    Those ppl qho has never stepped in kitchen . Has similar questions . When wipe wuth cotton cloth .most of the extra dirt or fungus or pestisides . Comes off with towel . And you shoudl do this 2 times . 😅

    Hi! I tried this one, and stored it in a glass container. The taste came out really good!! Thank you!! However, after a few days, fungus started growing. So I had separate the amlas and disposed the water. Could u tell me where I went wrong?? How to avoid it next time??

    Is it normal for the water to turn little cloudy after 3days?
    If you had added the pics of the pickled amlas after certain days like 3days, one week, one month etc, it would hav3 been a complete video, coz i wanted to preserve it at room temperature rather than un a refrigerator

      It is ok... it's mostly the salt.that is the visible white cloudy look.....never eat it if the cloudy stuff stars to stick to amla rather than seen in water ....then it is spoiled

      Not at all. Actually Amala murabba or chyavan prash or moravala is prepared by boiling Amala in sugar syrup. And these are the best medicines in Ayurveda.

    It becomes soft after a month or two . It does not remain hard. After three four months a layer of white fungus forms over it.
