So at 2:33 when you've united via pathfinder, when I do that, it is showing a black fill and a black stroke. Yours does not have a stroke after you've united it. That is throwing me off, and it's making it not come out right. Do I need to do something to my artwork differently?

Its hard to tell what's going on for you without looking at your artwork. Sorry.
I haven't thought of doing offset path, i usually just do a white stroke at 1pt and call it a day lol
