This is going to be my first attempt at making a terrine. I adore eggplant, and basil, and goat cheese and mushrooms. My taste buds are already looking forward to this!
***** Ah! my post disapeared! Well I made it! I am lucky that my wife does not like mushrooms, so it's all for me! Bwah haha! I made two mistakes 1) sliced vegetables too thin 2) overcooked vegetables a little bit. But nevertheless it is gooood. I put in a lot of my homegrown basil and was pleased that I could taste the (Uncooked) basil, the spinach, and the cheese each separately., yet they combined to give a delicious flavor. --Thanks!
I LOVE eggplant! and I have basil growing in my window garden. Have never ever seen this at any restaurant, and my son manages a pretty good Italian/Mediterranean food restaurant.
Well it's the end of September, and eggplant no longer available. BUT! I bought myself a slicing board, a good one from Williams Sonoma. I'm going to try substituting something for the eggplant. I still have goat cheese and my window herb garden is full of basil once again. Last time I messed up slicing the vegetables with a cheap metal slicing thing. I really liked the taste of this!
