Thank you for your comment❤ I live in Thailand, so have a hot climate & humidity as well. I put the cake in the fridge not the freezer to firm up. I used swiss Meringue buttercream with white chocolate ganache, so that helped it firm up well in the fridge. I placed the cake in front of fan to help dry any condensation, but I didn't have bad problems with condensation. If you have an air conditioned room that will help to also lower the amount of condensation on a cake, as the cake slowly comes to room temperature. I hope this helps🥰❤

Thank you for your question. I live in Thailand so the temperature is generally very hot. I have done lots of tests to get cakes to come back to room temperature slowly without sweating (too much). If you have a room with air con, take the cake from the fridge in the air conditioned room. If you do not have air con, take the cake from the fridge then place in front of a fan. The cake may sweat a bit, but should dry out, don't touch the cake until it is dry. I have never had any problems with excessive sweating. I hope this information helps.😊🤗
I think this would work with Whipped Cream, but I think it would be best with Stablised Whipped Cream to make it easier to work with and give you time to work with it. I have a stablised whipped cream recipe on my blog. It is for Almond Stablised Whipped Cream, but you can change it to any flavour Stablised Whipped Cream you want. You will also be able to see how well it works and how smooth you can get it on a cake.
