Urdu is a blend of many languages in which Persian is most probably the dominant one.
Khatarnak is a Persian word.

My aunt is Persian and she used to make this often. I recommend instead of plain rice, have butter in your rice. Also we use big tomatoes and we char them, and don’t forget the lemon/lime!

Well, honestly, I wouldn’t call them kebab as they are supposed to be sort of roundish; but, looks tasty, so, who cares, beautiful food and fast made, will use this method now.
Ruby is a lovely lady, saw her cooking first time today, but, she looks welcoming!

In Delhi, Turkman Gate, I have relished special DHAGEY WALEY KABABS...only one chap PROFESSOR makes it in a small hole in the wall type shop at evenings. These kababs are actually bound with fine thread and they fall apart like keema when you remove the DHAGA...but taste is DIVINE!
In Lucknow, I have seen kababs infused with smoke by putting them in an enclosed upturned pan with coals!😂

Yum! I just added a little trick of my own by frying the onion in little to no oil until translucent and grinned so it doesn’t leak any water even if marinated overnight! Love love love your recipes. My entire family and friends gang are hooked 😘😘😘
