    In March 2003, my 83 year old mother asked my younger brother and me to plant a garden and grow her some green beans for canning. So we did. In May, we learned she had Acute Myeloid Leukemia and only had a couple of months to live. In the week leading up to July 4th, be picked 300+ pounds of green beans and with the help of mom and 10 other members of the family we broke them up. Then on July 4th, at 6 AM, my brother and I started loading the quart mason jars ad using 6 pressure canners and 3 turkey burners, canned 154 quarts of green beans in 6 hours. We ate some that night and she loved them. She died 18 days later.

      That is such a sad, yet heartwarming story of love of family. I’m crying of course. My mom canned up until she lost that ability to dementia. We sometimes don’t appreciate how wonderful our parents are until we face our loss. You and your brother gave your mom the gift of love.

    My grandfather, who passed this January at 92, canned 250 quarts of beans one year (with some harvesting help from my sister, 2 cousins and me). I inherited all his canning equipment, right on time I must say, and have been doing my best to carry on his tradition of food preservation. His canner has wooden handles and it warms my heart to think about how many quarts of food came out of it. I miss him but every time I look at my shelves full of preserves I know he’s still with me.

    years ago, my best year at growing green beans, my wife canned 65 quarts. it took us years to eat them. but properly canned, the quality of the bean will last for at least 6 or 7 years. good luck. You guys are an inspiration to the homesteading and homegrown world. Thanks for your work.

      @Lynn Lamont Kentucky Wonder aka Old Homestead green beans are multi purpose. You can eat them, can them, and dry them to use as dried beans. I prefer them as dry to cook with. The skins are brown and you need to bring them to a boil, take off and drain, rinse, and then bring up to boil a couple times. It also has the way of rinsing off the gas from the beans. When cooked, the beans are a wonderful creamy texture. The best beans i have ever cooked in bean soups. They never are gritty like the navy can be.

    Canning beans bring back memories with my Grandparents. Grandpa woke at 4am every day until his last days. He was 89 years old when he planted his last garden and grandma canned so the had enough veggies through the winter.

      Exactly! We try to grow our garden. Green beans to very well, but we have woodland critters that help themselves to the rest of our garden. It's a bummer. All that hard work, but the critters do get full bellies😕 We were told to plant enough for them and the family so this year we're going to try it again. Never give up.

      Roundmot this is my first year growing a garden and it was a challenge, the rewards pays off. I too have a lot of critters and pets running off with my food but you just have to find a resolution that will work for you. Don't give upb/c it pays off in the end.

      The new ball lids don’t require simmering to soften the rings anymore.

    We always wipe off the rim with a clean cloth just before adding the lid and ring.

    Very helpful with regard to siphoning. I made a vegetable soup and almost every quart siphoned an inch of liquid out. Fortunately the seals did stay intact. 🙏🙏

    I just watched your video on canning dried beans. I soak my dried bean overnight or quick soak, usually try to do overnight. Then I cook then in my pressure cooker with onion, garlic, bacon that was cooked in the pot first, salt and pepper for about 10 to 15 minutes depending on quantity I’m cooking. The quick release the pressure and thicken with cold water and cornstarch. My husband who has eaten pinto beans his entire life says they are the best beans ever. No need to can them, dried beans store very well long term as I put them in my vacuum seal canisters and vacuum all the air out. I’m telling you girl that vacuum sealer was an investment that has paid for itself many times over. I bought my fist one years ago and gave it to my friend when we moved to VT. Went to a yard sale and found the newest model for sale for $10.00!! The person who had bought it apparently put the drip tray in backwards and never used it. Brand new still had the instructions and labels on it. Still have it, it is now 8 years old and I am going to get another one. It will be the best money you ever spend for food preservation. The canisters are the bomb!! They do have to have the edge spotless or they won’t seal! Wipe your edge with a damp cloth and then a dry paper towel. I’ve tried all the tricks. I had a couple of my canisters crack on the bottom and I think it was my fault for vacuuming the too long but when I called they sent me out replacements for free and there is also a special vacuum lid for mason jars! I have found them at thrift stores too. I pray God blessings on you and you family and homestead!!

    Try easy tomato sauce. Cut tops off, squeeze seeds out, blend with skins, cook and reduce a third and can. Makes perfect sauce. The natural pectin in the skins keep it beautiful in the jars.

    To wash that inner pot shiny clean spray straight white vinegar and sprinkle baking soda. It will fizz and get a good metal scrubber and it will come out shiny bright no stain.

    A great thing to do while you are cleaning or working outside, you can self teach yourself a foreign language, literature, history, etc. Get books on tape! This also helps to keep you from talking to yourself. As always, Chris Bitonti

    I canned green beans for the first time last year , everything went great first time . Can’t wait to do it again. I am going to can pinto, white beans and cabbage next week. And want to try canning potatoes. Your garden is awesome. Hope my garden will do good this year so I don’t have to go to farmers market.

    Green beans look amazing, I dont own a canner, I do all my canning in hot baths, way my mom and her mom always did it, we live in , Missouri, right by the Amish, they don't own pressure canners either, I love all your videos, god bless you

    Easy green bean canning to consider if you care to. Even if a jar or two to try.
    Break beans and pack in jars as tight as you can pack them in, no head space. Put the ring and lids on normal tightening.
    No water, no salt. Into the oven at 250 degrees for 2 1/2 hours.
    Let them cool down and remove the rings.
    They will taste as good as the day they were harvested years later. Promise.

    Green beans canned with diced tomatoes is delicious! I pressure can them on a veggie soup time and they are my favorite way to eat them!

    I use hot pack exclusively for green beans. I find it easier to fill the jars that way.

    I'm new to viewing your channel. I was surprised you were in S. Missouri since you went to Branson. My husband has often mentioned that we might retire out that way. His only inhibition is the bugs that he remembers as a teen. Something about bugs so big they'd bat them like a baseball.... and snakes. You make Missouri look a lot more appealing to me. Grin.

    I've never pressure canned green beans. I always water bath but I can them for 3 hrs

    I normally bake my pumpkin seeds each year and enjoy them so much even if the hulls are really crunchy BUT, winter squash seeds are even better. I just learned they are edible and tried them, they are way better than pumpkin due to the hulls not being as fibrous - just so good. I give them a little bit of oil, very little bit of salt and roast about 30 min but depends on how moist they are. I used to let them dry first but found that was the wrong thing to do. Now I just bake them in a pan while my squash bakes but remove them when they start getting brown. Such a great snack. I've heard that you can candy the salted seeds to garnish soups but haven't tried it - the seeds are usually gone in a day.

    So nice to see your girls in the videos!! Love your videos, you are inspiring, and we are going to try the landscape fabric next year, for 29 years we have tried to keep ahead of the weeds and are still losing LOL. Canned 26 pints of green beans yesterday. God bless!!

    My family has canned green beans for many many years and we never put any water in them. Just pack the jars tight, put your lids and rings on and can as usual. I know I will probably get told I’m crazy etc but before you try having me committed to the nut hut try it for yourself. We have canned 100 or more qts a season with no water and they are delicious when you open and use them. They will keep just as long as any other method.

    I have ordered the book from Amazon a few days ago from another video of yours. I had a much smaller Ball book. This year I want to venture into canning the low acid foods. I need to find a new seal for my pressure cooker that hasn't been used in 30 years or buy a new one. I have to unburry it from the garage as it hasn't been unpacked since I retired and moved more than three years ago. Last year I had a 33 inch raised bed made for me as I need kneecreplacements. It got finished late so mostly I got beans (which I froze) , lettuce, chives, basil and crooked neck squash. My tomatoes never matured. This year is looking good. I planted tomato plants, and anaheim and jalapeno pepper plants as the cats would destroy any seedlings in the house. I have sprouting bunching onions, basil, lettuce, kale, spinach, beets, bush beans, Chinese peas, basil, and dill. I also planted a butternut and crooked neck squash in a grow bag as the squash took over a lot of the garden last year. I am so hoping for good results.

    How awesome. I’ve never canned before but I sure do get encouraged to do so when I watch your videos. It’s one of my goals to accumulate the necessary items and can for the spring season of 2019 including growing my garden size to accommodate for canning green beans and some tomato product. I figure starting small will be the best way to accomplish my goals. Thank you for making such great informative and encouraging videos.

      Kara Grant if you have a pot that will hold a jar a grill to set jar on & will hold enough water to go at least an inch above top of jar on grill with lid & ring on...then you can can tomatoes from farmers market. Tomatoes are a waterbath food. So start today on that much. Then next year you won't feel so overwhelmed.

    I only have a single stack pressure canner with only a weighted gauge, I haven't been able to find a video where anyone shows how to use this. I have always done foods with a water bath canner, but I would like to take advantage of my pressure canner.

    So grateful for your video/ instructions, we’ve never had a good crop of green beans until this year, after listening to you and several other sites I purposed to buying a pressure cooker canner. I looked on Craigslist and found one for $50.00 and it was literally 20 minutes away and she had just posted it minutes before I looked Thank you LORD! I subscribed to your site and hope to learn more, I’ve been canning apples, beets, sauces for 30 years...the money we’ve saved on canning! Loving this- thank you

    I love green beans but I will say they are one veg that I hate canned so I would also bring up make sure you preserve the way you enjoy eating it.

    I love canning alot of food but my kid loves helping me but I appreciate that she's a good helper for me and she told me that she's never gonna leave my siate anyway god bless you and your family have a good day and stay safe from covid-19 it's horrible who died from it has a kind soul and heart but us that's lives doesn't deserve to die from covid-19 they want to live with their families and friends im saying this from my heart I love however loves this comment is a loving family to my heart

    I did some this year, with tiny baby potatoes. Delicious too. Never tried tomatoes with them. We had lots of canning done this year and lots of jelly. 37 pounds of sugar worth in jellies. Even used fresh honey “ no sugar” to make bread and butter pickles. Best ever.

    You have had an absolutely beautiful and abundant harvest this year! I wish I could say the same. The heat and humidity on the coast is almost unbearable. I had a good harvest in the Spring before the summer temps hit us. Enjoy watching you videos!

    You make pressure canning look so much easier then i thought, i have been canning for years but water bath, so green beans takes 3 hours. Also we had seen that play too so good! My young boys loved watching Samson

      FYI water bath canning low acid foods is an unsafe practice. You put yourself at risk for botulism, which can permanently disable or even kill you. If you haven't already gotten somebody sick, you've lucked out. Please reconsider.

    Came to check canning green beans and the first thing I noticed was how much the girls have grown. I needed a refresher course since I haven't canned beans in several years but am this year. Thanks. By the way my Ball book is in pieces from all the years of use.

    Another great video. Glad you and the girls could go on that church trip and get away for the day. Your beans look beautiful. We eat a lot of them too. My favorite next to the tomatoes.

    Have so many green beans this year don't know what to do with them all. I water bathed a case and pickled a case. The reg canned ones all fermented but pickled ones still good so far. I even added citric acid. I must not of cooked them long enough. Have 102 tomatoes this year. And they are just now coming in. Beaf master San Marzons choc sprinkles super sweet 100s and a few others. Love your Vids Hon. Stay Well!!
