Thanks for the info. I was not aware I could buy them frozen and peeled. I want to try Yuca because of allergies and sensitivity I can't eat the russet and Yukon gold potatoes. I can eat sweet potatoes. So I have kinda tried Parsnips, but I miss French fries and mashed potatoes.

We beat it sitting on the floor while holding the pot with the feet. Hehehe no joke… and our old grandmothers will also use that same stick to walk your butt if you mess with the fufu when they beating it…
Here in my home country Nigeria we call it cassava. It's an everyday staple food, a main dish. It is grinded raw, sometimes the starch is removed which is made into another meal. After grinding, tie in a cotton sack to drain out the water then dry fry in a hot pan and it comes out like breadcrumbs. When it is made with hot water it looks like a dough and we eat it with soup. We can also pour water, milk and sugar on it and snack on it with peanuts, coconut or fried fish. But this is the first time I'm seeing it fried. I'll definitely be trying this. Miss Pam, yuca also makes delicious latkes. After I peel them and remove the center stem, I soak them in a bowl of water for about an hour to draw out any toxins. Then I grate them into a large bowl with a box grater, grate a small onion (about 1 part onion to 2 parts yuca), and add a few tablespoons or so of cassava flour to act as a binder. Mix well. Place a large spoonful of the mixture into a hot pan with a layer of oil and flatten them with the back of your spoon. Flip when the edges turn brown. When they're done, remove them to a plate with a paper towel and salt. Serve with apple sauce or sour cream. Enjoy!

I've done boiled, chilled & reheated (increases resistant starch vs calorie-adding starch) * some people soak ahead of time after being cut. discard the cooking water always. also: I use a horizontal serrated peeler for tough skin like this: those are SO helpful and makes it easier. probably going to make these :)

His fav is Pepper Soup/sauce, however we're seniors now & we do NOT enjoy the habanero "picante"/spice as we use to, lol. Digestive has changed drastically, ugh & lol. We do enjoy moin-moin, which to me is their delish version of "tamale", except it's made with Black Eye Pea flour. So delish made with hard boiled egg & sardine. Yum! Two years ago we went on vacation to Daytona Beach, we went to a Columbian restaurant and ordered yuca fries, but since I was 6 weeks pregnant and very sick, I could only look at them, i couldn't stand the fried smell 😢...all I could do was remember what they looked like lol...Yesterday, I was just telling my hubby that I'm going to try to make fried Yuca, i was going to boil first (from frozen), then fry rhem as an experiment since i wasn't really sure of how to make them. In Ghana West Africa, we call it cassava. We make cassava dough, powder, fufu etc with it. Thanks for sharing. I will try ur recipe. Very crunchy.
