Chicken and Rice Kabsa | Arabian flavourful dish

Take a trip to the Middle East with your taste buds! This Chicken Kabsa is bursting with authentic flavours. It’s infused with the warmth of cumin, the floral notes of cardamom, and a touch of smokiness from spices straight from the Middle East. Bonus! This dish is not only flavourful, but it's also perfect for meal prep. It reheats beautifully and can be enjoyed for a few days in the fridge.
INGREDIENTS
CHICKE MARINATION
- 5 chicken thighs
- fresh lemon juice from half of lemon
- 1 tbsp olive oil
- 1 tsp 7 spice (ready or check the blend below)*
- 1 tsp of each:
∙ turmeric
∙ coriander
∙ ginger powder
∙ cumin
∙ salt
∙ black pepper
RICE MIXTURE
- 2 tbsp extra virgin olive oil
- 1 medium white onion, chopped
- 4 garlic cloves, minced
- 1 dried lime
- 1 cinnamon stick
- 4 cardamom pods
- 3 bay leaves
- 1 tbsp tomato paste
- 2 medium tomatoes, chopped
- 2 cups basmati rice, washed
- 2 1/2 chicken broth
- 1/2 cup cilantro, chopped
7 SPICE BLEND
∙ cumin
∙ coriander
∙ turmeric
∙ cardamom
∙ cloves
∙ cinnamon
∙ fenugreek
∙ anise seed
∙ ginger
∙ red chilli
