It's quite possible that something like a Habanero pepper or Scotch Bonnet pepper is used in their hot chicken sandwich sauce. Both of those peppers have a really nice fruity quality to the flavor.
I don't know if traditional Belgian witbeirs are the same as American wits, but usually American wit beers are spiced with a small amount of coriander, so that might be the flavor you are detecting but can't quite place.
Normally when you make grits at home, you would put salt in the water. Some restaurants do not put salt in the grits. They allow the customer to add the salt. To me it does not taste the same because the salt is not cooked to the grits.

You can't use New York and Southern Soul food in the same sentence. Your are 100% guaranteed to not find actual Southern Soul food anywhere in New York. Just like you're never going to find actual New York Pizza in the South. It just ain't gonna happen.

But honestly, the line between "soul" and "southern" is very blurry.

I used to live between Sylvia'a and Red Rooster in Harlem and ate at one ot the other every Sunday. There is so much great food in the area.
