We’d pull them out of the tanks and throw them in a huge walk in freezer. Love me a good soft crab BLT sandwich.

Motorcity casino in Detroit used to serve a “Champon ramen” dish wish looked like Naruto ramen but there was a whole fried crab in the there. It was truly amazing and my bud and I went there probably 5-6 times in a summer until they stopped serving it. Must have been seasonal this was about 2019
This is one of my favorite foods. A local Viet place served this stuff, fried in some batter and sweet potatoes, and you wrap them in a little lettuce and dip it in the fish sauce. So. Good.
We call the lungs/gills “devils” where I grew up. Soft-shell isn’t really an acquired taste, per se. I’d say it’s more of an acquired experience lol first time is quite gnarly, but the taste is amazing.
