I love these recipes because he clarifies this is very different from japanese sushi. This is his own take/creation on the subject using his own idea. Love the clarification. Excellent, and it looks phenomenal. The way he made the octopus in that wine vat reminds me very much of Italy.
It was cool how you compared the wasabi to cucumber! I had a very different experience with wasabi when i tried it freshly grated on wagyu with some egg yolk. It tasted wildly different from horse radish and my favorite way to describe the flavor is by comparing it to a home grown carrot (but with that horse radish bite of course lol)
Fun fact : Japan didn't grated wasabi like that, they use special one that made of shark skin and didn't peel the skin off to make wasabi have more mint flavors and more fresh
