    Hello! If you add a whip cream filling with fresh strawberry’s does the fruit go down first or the whip? Also does it still need to be a 1/4 inch thick in the middle or thicker? Thanks

      Hi! When using fresh fruits, I put a thinner layer of my buttercream or whipped cream, then the fruit, then a thin layer of the buttercream/whipped cream on top of the fruit for a total thickness of 1/4". The layer on top of the fruit will give the next layer of cake something to hold on to. Hope this helps! :)

      90g Glucose or Corn Syrup
      180g Water

      I used about 4.5 pounds of buttercream. I had a 5 lb batch which was enough for filling, crumb coat, final coat, and piped borders with a little left over.

    Your cake should always be cold and chilled before frosting it. It makes it easier to frost the cake.

    I wonder if a big Cake Strip wrapped around the pan would keep the top of the cake more flat. So you wouldn't have to cut the top off

    How did you keep crumbs from getting in the rating when you were doing the filling for between the cakes? Because when frosting the cake usually you crumb coat it so I'm just wondering.

      Hi! I chill the cakes overnight so they can firm up, and that really cuts down on the crumbs.

    Is the crumb layer the same mixture as the final layer of butter cream and why 2 layers ?

      Hi Kathy! The first layer of buttercream is a thin layer that, when chilled, will seal in the crumbs. This allows a second layer of buttercream to be applied that is clean and crumb-free. Thanks for watching!

    Becky how many cups of batter do you put in a 9x13x2 inch pan.. and do you bake at 350 or 325?

      Hi Alfreda! Typically a 9x13 pan will take 1 box of cake mix, which is also the amount I used for the quarter sheet pan. I used 2 boxes to bake 2 layers. For the baking temperature, it’s always best to follow the instructions for the recipe or mix. Hope this helps!

      One box cake mix only makes 4 to 5 cups batter.. is it best to use one box per layer or put two boxes in a 9x13x2 then split it it for two layers?

      These are restaurant standard quarter sheet pans, roughly 12”x8”. You can find them at restaurant supply stores. Many craft stores carry them now in the cake decorating section also.
