With great respect, I want to say: I LOVE YOU; you are the one who made me smile this early afternoon. Thank you for being so happy and a wonderful teacher. What a wonderful show! w/love [all of us!]
Watching this makes me want to go to the store to get ingredients instantly, Erin has an amazing effect of turning a boring Saturday into a "hmm maybe I will bake a cake" kinda of day. The only thing is, I'm not a fan of dessicated coconut, does anyone know what effect this will have on the cake in terms of moisture?
Lmao, you are somehow one of my number 1 baking resources these days. I just made a toasty spiced toasted coconut and toasted almond flour whipped cream frosting/mousse using your peanut butter whipped frosting recipe as a base. I def have to make a sheet cake to pair with it! Thanks!
This carrot cake & icing recipe sounds perfect for my friends birthday cake. Delicious & not too sweet. Perfect timing! Plus you are such a joy to watch, Thank You.
Erin your just fabulous 🎉 I am so lucky to have the opportunity to learn from you. I always get excited to see your next bake . You are just wonderful to watch. Your my TV friend 😉
Love white wedding cake. When I was younger and went to a wedding (we have a large family!) we would always bring home leftover white wedding cake wrapped in bride/groom napkins. Yum!
You are so awesome! Love the energy and personality you bring to baking! Thank you! I do have a tip for you, to prevent separation of the condensed milk frosting.....use cold condensed milk. This is the ONLY buttercream frosting I like so I make it quite a bit and it never separates if I used the condensed milk straight from the fridge.
I love you!❤️ What a lovely video to watch. Many thanks for the happy inspiration. I'm so happy to see even real bakers can delight in the results the way I do when I make a once-in-a-decade cake! Please keep baking and making us smile!
From Miss Donna Marie Baff I love carrot cake and was a real staple during the world at war II SPAM, specially prepared American meat, our special relationship with the United States of America. SPAM fed the UK during the war years.
One tip to making your own sprinkles instead of just using a normal tip use a grass tip so you get multiple lines at one time if you want to create interesting pieces sometimes you get little curls and swirls or you end up getting a little hashtag marks it can just be something super funny
Can’t wait to try these recipes Erin how can I store cloth these cakes especially with the icing I like to cut up and freez individual pieces is that possible with those frostings
Hey Erin love the channel. I am looking for a combined cream cheese and mascarpone cheese frosting for a carrot cake with pecans, coconut and pineapple spiced cake. Goal is less sweet frosting with hints of flavor and a tropical version of cake. No rum in this one…but an option. I had such a cake in Aruba on my honeymoon 30 years ago. I haven’t found anything that is close. Maybe toasted pecans first? Looking for help.
I subscribed just to see Erin and her baking. Sadly, I get all these others from Food52 that I'm not interested in. I do love how excited Erin gets and how well she explains things as she goes.
My wedding cake was also carrot cake! Your parents have good taste. Because it was so heavy we did a small three-tiered cake (with fresh flowers) for display and cutting, them we had the rest as sheet cakes to serve after dinner. This was a bit before everyone did fresh flowers and non-traditional cakes so I got a little bit of push back. (I’m guessing I’m somewhere between you and your parents?) Anyway- LOVE all your videos and make your Apple Butter Quick Bread at least 2x a month. (With tweaks. Like Sweet Potato Butter, coconut yogurt and coconut sugar topping.)
Erin I have a QUESTION ABOUT THE WRITTEN RECIPE. First, I'm so glad I found you! Love watching your vids! I really, really want to make this white cake but when I printed the recipe, some of the grams-to-cups equivalents seemed 'off'? I think you like to weigh the ingredients rather than measure so that's probably safe. But for just one example, if the sugar is 454 grams, that's closer to 2 1/4 C rather than 1 1/2 C? Check milk too! I'm looking forward to baking and eating this cake!
Are half sheet cakes appropriate for a wedding? For me, this is easier to make, decorate, transport and cut for a smaller wedding. My sister says her second wedding is going to be informal and she really does prefer a simpler cake for her event in a year or so. Any advice is helpful. I want to do the right thing.
Hey Erin! Love all your videos and recipe books…especially, “The Book on Pie”…so beautiful and creative…when I steal a few quiet moments in my day…I look and marvel at your book on pie. …My mother is celebrating a momentous birthday in early December (she doesn’t want any of friends to know her true age…so I can’t divulge it here!😂) ..in Vancouver BC…I live in Ottawa, Ontario …and will have no kitchen to speak of in which to bake ….so I plan to make a sheet cake, freeze it …and bring it with me … with frosting and decorative bits in tow to Vancouver. She, like your parents, doesn’t care for overly sweet frosting….f loves carrot cake ..and I love vanilla cake …so I will also bake both as you did …and somehow assemble her’s using half carrot and half white!!! I am super excited!!! I love this video…because you think of everything…right down to making your own cinnamon and vanilla sprinkles. …Love your energy, gurl!!….You are so uplifting and inspirational!
Erin, I love your approach and I’ve learned so much from you ! But trying to learn more: You used brown sugar. I’ve now learned that I can make that myself, mixing ordinary sugar with molasses. But do you have to really make it, or could I mix white sugar and then molasses directly in the carrot cake? Would it make a difference?
curious if you have a link for the glass mixing bowl compatible with the kitchen aide? There seem to be alot of choices on amazon with mixed reviews.....
If you're making the carrot cake for someone who dislikes coconut could you substitute rinsed, dried, cut up sauerkraut? I read that it could work, maybe it was in cookies. ;)
Erin, I absolutely love you!You are the best; all the instructions and teaching tricks you provide are excellent. Which size mixing bowl are using for the carrot cake recipe?
You solved my problem with cream cheese frosting. I’ve avoided it because it always felt too rich and heavy for me. Though that’s probably more because I’m huge fan light airy cakes like angel food/chiffon cakes and especially white cakes.
You, My Dear Baking Guardian Angel, taught me how to make the most perfect puff pastry ever. I make a few batches a week just so I can make wonderful things for my friends and family. Croissants, palmiers, kouign amman, tarts, galettes, all manner of wonderful dishes that have blessed my life. I have so much to thank you for and the greatest way I know how to show thanks is to cook for someone. I obviously cannot do that but know that my next batch of perfect Erin McDowell croissants is in honor of you.
I am going to try the vanilla cake and sweetened condensed milk buttercream. I haven't made a sheet cake in a very long time. I've never even tasted that frosting. This is perfect for our end of summer family get together!
Thank you for sharing your recipes.. I will make the white sheet cake with the Russian frosting.. I already have a favorite recipe for carrot cake so I probably won't make yours.. :)
The video shows 3 sticks of butter or 12 oz. for the vanilla sheet cake but the written recipe shows 10 oz. I’m assuming the video is correct? Thank you!
I soooo suck at piping...I like to make shaped, decorated cookies for holidays but the decorating part is so frustrating, between getting the consistency of the frosting right and making it go where I want! Maybe if I watch more of her videos (or even hug the monitor) her knowledge will soak in and I can absorb her skills...
Can i use the ahredded carrots that are available in the produce section of our neighborhood grocery store ? Yes, i am kinda really lazy. Ok, i'll just grate the carrots. 😢
Have you had any experience with Hawaiian cakes? We have a bakery here that makes guava cake, pineapple cake, persimmon cake and others. Fantastic; and they are iced with just a creamy icing, which is a perfect compliment to their fresh fruit tastes.
I love your videos and I am learning a lot. I tried making the condensed milk frosting a few years ago and it was not fluffy and tasted like plastic. Can you give me an idea as to why this happened? I chucked the recipe.
I am interested in both which is cool but I will probably start with carrot cake I love but don’t care for thick cake and thick frosting less sugar and sweetness is dream land to me Brena
Do you do anything to prepare the pans? I didn’t see you do anything specific so are you using a specific pan and if so what kind? This white cake has been my go to for many years and my kids always wanted it for their birthday when they were growing up.
I like to use margarine in my cakes does anyone know if i should use less or more by weight? Ive been using the same weight but does anyone have any tips x
*Help!* I made your white cake and my son-in-law says "I don't mean anything bad by this but your cake taste just like cornbread I like it" aahh! He was right it had the texture of sweet cornbread ...What did I do wrong?
If I may offer a couple of suggestions. Perhaps you did not cream the butter and sugar long enough creating a light airy texture. Another culprit may be your baking powder. I find that making sure it’s very fresh makes a huge difference in the texture of my cakes.
making the white cake and I am finding some differences in the recipe. The recipe calls for 10 oz or 285 g. You say 3 sticks. Also the recipe calls for 1.5 cups sugar or 454 g. 1.5 c sugar weighs out to 300 g. So I am really confused. Thanks
First video of yours I've seen. I just subscribed !! Great delivery, no BS and very knowledgeable ! Thanks for sharing your talent and ability! I cook and bake a lot and always appreciate creative and personable chefs...if that's what you call yourself....like I said 1st video I've seen ...lol
Erin, my kitchen has been torn up for almost 2 years so no stove, no ovens, no good solid baking possible. I think I'm going to do both these two. cakes in my new Thermador double ovens ( convection)! They both look amazing in their own way, and I LOVE the whipped cream/cream cheese idea! You are a genius!!! Please don't ever stop creating!
So... your older brothers ate half of your parents' wedding cake. Isn't that interesting. I love these videos because Erin McDowell's mastery of baking is unassailable. It's a pleasure to listen to an expert speaking on topics they own. And she certainly does.
The white cake is similar to Dominican cake, but instead of milk we use pineapple juice and Italian meringue for icing 😍🥰 it’s my favorite cake of all time
I love watching her! She is like sunshine in human form!
A whole half hour of Erin - a dream

This woman is adorable- I wish I had a tenth of her energy- and joy she exudes. Thank you Erin!
Love white wedding cake. When I was younger and went to a wedding (we have a large family!) we would always bring home leftover white wedding cake wrapped in bride/groom napkins. Yum!
Love watching Erin, she’s so passionate about baking, shares great tips, and a delight to watch. Thank you for sharing your recipes and talent!

Would please share your recipe? 😬
Yay!! Another Erin food lesson. It’s really like going to baking school..🌷🌷🌷
I love you!❤️ What a lovely video to watch. Many thanks for the happy inspiration. I'm so happy to see even real bakers can delight in the results the way I do when I make a once-in-a-decade cake! Please keep baking and making us smile!
I love to watch Erin show her stuff. I like baking, but she adds some joy to it all.
So great. And so nice to see a cake without a mixer! I don’t have one and really appreciate this.
Erin we need a chocolate cake choice too! Please and thank you!
Erin, you are the bomb! Love watching you bake! Can I make this cake in 2 layers? Two 8 inch or two 9 inch cake pans?
From Miss Donna Marie Baff

I'd be crazy and make them both!! I can't wait to try the homemade sprinkles
I absolutely love Erin's recipes..Recently tried the coconut cake recipe n it was amazing!!
love this Erin. keep doing what you're doing.
Sprinkles? Oh, you mean jimmies! That’s what they’re called in Boston 😉 Your classes here are genius, I don’t miss any of ‘em. Thanks!
Can’t wait to try these recipes Erin how can I store cloth these cakes especially with the icing I like to cut up and freez individual pieces is that possible with those frostings
I want that carrot cake and that icing sounds delicious! As always, love, love, love your videos!
I just love your passion for baked goods! We should really be besties lol
That whipped cream/cream cheese frosting looks amazing.... Like the best of both worlds!
Hey Erin love the channel. I am looking for a combined cream cheese and mascarpone cheese frosting for a carrot cake with pecans, coconut and pineapple spiced cake. Gosh! Have you been reading my mind?
You should give a try to Krysten - Genius Recipes! She is also pretty good and I tried some of her recipes! They are easy and came out beautifully!
Erin's back!!!
She is so funny amazing talent and full of energy.great teacher. Wish I cud bake with her.
I think we all wish we could bake with her

“I’m going to keep things simple let’s make homemade sprinkles” 2 days later………..hahahaha. I’m still going to try them
Thanks for these recipes and the stories behind them, I am definitely gonna try them!
Whats the sort name of the sunflowers in the background? They are so nice in this pale color. Like the cake 😋😘
Drooling over the yummy carrot cake lol...btw where can I buy that gorgeous mixing bowl? 😍

Hi Erin. I felt your happiness when you held those thick sprinkles 🥰and it made me smile too. I get you. 😁. Love from the Philippines 🇵🇭. 071223
I love ro watch Erin. I want to bake 9x13 3in layer cakes for my church. Is this frosting summer friendly when transporting
That cream cheese/cream frosting will be the next one I make!
I am going to try the vanilla cake and sweetened condensed milk buttercream. I haven't made a sheet cake in a very long time. I've never even tasted that frosting. This is perfect for our end of summer family get together!
Are the vintage blue stripe food 52 mixing bowls coming back or were they defective 😔
Thank you!
In our house, the word ‘slime factor’ comes to mind with store bought sprinkles. Ugh. Homemade is brilliant!!
hi, erin, Im Glad to see you and your videos. One question, wht means Piping 101?
Love a dense cake. Can't wait to try. The vanilla would be my first choice.
I love your videos but I am not making sprinkles! LOL!

Hi I like your recipe ,I'm asking for measurements please
I’d make the white cake, because I have a great carrot cake recipe already!!!❤
I don't even like baking, but I love watching Erin bake. She has so much fun with it that I almost want to try doing it myself.
I agree, no slice shaming! I’m definitely going to try to make the carrot cake 🧡
White both cakes sound good, I am not a carrot fan. I need to try both frostings though.
white cake!! I'll slap some molasses in the carrot cake!
I would like to try the cream cheese frosting 😉
I want to make both of them. I love watching you bake, you make it look so fun.
Can your cake recipes be doubled to make a half sheet?
Love to watch her! She is such a wonderful role model and teacher. Can’t wait for the new book❤️
How deep was the 9x13
It looked like it was a 3in deep pan?
Thank you for the less sweet frostings options!
I really look forward to bake it up a notch episodes
Me too!
I like to use margarine in my cakes does anyone know if i should use less or more by weight? Ive been using the same weight but does anyone have any tips x

Looking at the printed recipe for the white cake it says to add 10T of butter (1 stick +2T) The video shows 3 sticks of butter. Which is right?
Where do I find the recipe for the white cake please?
Thank you for the video.
