    Thanks for this. I always loved our traditional marzipan and Royal icing Christmas cake that we had as I was growing up. My late sister was the expert baker in our house and it was all home made. Home made marzipan is soooo much nicer than bought, and I much prefer royal icing to fondant.
    I’m making my cake tomorrow and will marzipan and ice it over the week, ready for Christmas afternoon tea.

      Not specifically hers, but a very simple yet delicious fruit cake I’ve been making recently. Fruit is soaking in Guinness as we speak 😊

    I was going to buy some marzipan but it was all sold out. Thankfully I’d seen your video and knew I could make it myself with ground almonds which is brilliant as I love marzipan! I followed your steps for the marzipan and royal icing and we now have a cake, that my mum would have been proud of. My mum always made a Christmas cake like yours but sadly, we lost her a few years ago but I am so pleased with mine, that I will be sharing it as much as I can, after eating some myself, of course! Thank you for your video and Merry Christmas x

    Thanks for the royal icing tips. So simple and un fussy and my icing worked properly and wasn’t soft like it has been for so many years. It was a proper traditional cake like I used to have when young. Cheers and merry Christmas

    Hi you make everything look so easy. I did my first feed yesterday I followed your instructions my cake looks and smells yummy Thank you for making these videos. I was just going to leave my cake naked but after seeing how easy it is to dress it well I might have to do just that. I know it is not easy but if I can do it anyone can I blame you for makeing these yummy viedos lol. I try something new every week can,t wait to see what your next video will be.     I remember when I was a child that the icing on the christmas cand was really hard having grown up with it that way it brings back memories but these days the icing is really soft and almost sickly.
    Can someone remind me how the royal icing was made in those days.

      Hi Leigh I remember loving the hard icing as a kid and my grand aunt sending a bag of it home with me and being all delighted with myself. The royal icing on the tutorial I did was pretty hard. I know you can put glycerine in it if you want to soften it. x It's just icing sugar/powdered sugar and egg white x

      Most icing you get nowadays is fondant icing not royal icing. I find it very sickly.

    I'm going to use a little glycerine in my icing so it's not quite so tooth crackingly hard - and wondering if I should put the decorations on as soon as iced, or leave to harden first? (using a mix of sugared rosemary / cranberries / bay leaves + star anise & cinnamon stick + dried orange & lemon slices)

      This one wasn't too hard Janet compared to some but I only iced it a few days before Christmas so maybe that's why. I'd say the decorations your using will be fine once it hardens .If you had to stick decorations in like mine best done when the icing goes on. I love the sugared rosemary and cranberries they give a real pretty look. The dried oranges and lemons will be lovely too - are you drying them yourself? It's something I must try and do. Bet it will look amazing once it's decorated. x

      @@ScrummyTV thanks! yes, homemade - I sliced an orange & a lemon thinly, patted with kitchen towel, then left on a baking sheet in the oven on the lowest heat possible for about 5 hours, turning over every so often, then left to cool & kept in the open for the past week to finish drying - whatever I don't use for the cake will get tied together with ribbon with some cinnamon sticks & hung on the treet!

      How do you make sugared rosemary and cranberries- or are they bought? If so I’m pretty sure they’re not available in Australia!

    After icing the cake do put in the fridge?

      No that will soften the royal icing - leave on your table on display or place in a cool room :)
