Its because she's nervous and it sounds like she has a speech impediment too. You don't really hear it if she speaks fast. I've noticed people with speech impediments will either not talk or limit what they say or talk a lot but very fast to hide it.

But it's about more than just control per se. It's about manifesting your vision in the exact way you imagined it. You can't always do that if someone else is mixing your tracks. Unless you can afford to shell out for endless revisions... which are quite costly.
