Just preparing scoops of ice cream in cupcake papers is a good idea. Portion control, no struggling with that gallon of frozen concrete, papers could match the cake and be pre sprinkled looking super cute.
I have a chocolate mousse recipe that freezes without making crystals. I have piped (with a ziplock baggie with a hole in the corner) little mounds of it on parchment on a cookie sheet, or plopped some spoonfuls into silicone muffin cups, and frozen the stuff. Then pop them out / off, and store in a big ziplock in the freezer. They make a slightly messy finger food, and you can adjust the sweetness and add walnuts. They are . . . not attractive 💩, but they're tasty!

It's the first hit when you search "Better Crocker Best Chocolate Mousse". I'll post a second comment with a link. Don't worry if the chocolate separates a little when you mix it in, it'll all probably go fine when you stir in the whipping cream. I have tried coconut milk in this recipe with no success. Be careful about heating your cream & egg yolk mixture very gently and stirring very constantly and thoroughly, or you'll get textured bits.

It's not going to melt in your mouth the way the ice cream you started with would.

as an adult i love the entire concept, the thought that goes into it despite being super simple and easy to make for any occasion that calls for it, you could even have a little tray full of toppings so when it comes time to put the ice cream into the cones everyone can put whatever they’d like on ‘em (i.e nuts, cherry on top, etc)!!

LOVE this idea. Not too much more work than it is to stand there seeing ice cream to the kids, and it’s a really easy way to have portioned cones really fast. Plus it’s way easier than making an actual ice cream cake at home, but still looks presentable as “cupcakes”!! I love it!
Aww...nostalgia! Back in the day when I worked at an ice cream shop, we would do something very similar. We would make a face on a ball of ice cream and put the cone on as a hat, the cupcake wrapper would become the neck ruffle and voila... a clown! Kids loved them. This is a genius idea for not only parties, but also if you have multiple children it makes giving them an ice cream quicker and more fancier. If I get fresh ice cream its easier to scoop, but once its been in the freezer for a couple of days its much more frozen and more difficult to scoop unless you wait a couple of minutes for it to soften a little before serving, but this is time consuming and can be messy, but the cupcake idea is genius!!!! For the little kids and the ice cream melting down into the cone chuck a marshmallow in the bottom that helped soak up the ice cream so the bottom doesn’t fall out if you cone 😃
