I don't like brisket to be fall apart tender. It becomes stringy and dry. I prefer it to have some firmness.

For someone who has such a reputation he really doesn’t know how to grill stuff.
I prefer no wrap whatsoever on any bbq.
This grill coast $ 1300. Not $ 10000.
You can easily look at their website and see it costs, at minimum, $9200 USD before taxes or shipping.
