    Who the hell wraps their bbq if they do that might as well boil them or cook in a crock pot .

      Every competition BBQ cook ever. Large scale production places don't wrap because the juice isn't worth the squeeze but if you're spending a lot of money on your meat and time smoking it why wouldn't you spend an extra 2 minutes making sure you have the best bbq possible when your doing Backyard BBQ. If you follow the method, the consistency isn't anything close to crock pot. Thats pretty much the whole point.

      ​@DelmarvaBackyard I just bought a Traeger smoker and trying to learn how to cook with it. I greatly appreciate your explanation. I smoked some ribs in foil this weekend and now know how to get bark next time. Thanks.

      @@mikemays6964 -Start without foil. Cook to 160. Wrap in foil cook until done. Let them rest in foil before eating.
