My mouth is watering. Delicious I'm sure. We used to have a little Greek restaurant in our community but the couple who ran it went back to Greece. They made wonderful desserts like this. Boy do I miss them.

My late uncle by marriage was of Albanian ancestry, a small country next to Greece so I also grew up eating Moussaka and Spanikopita! I've been making different Greek salads so will add this to my list! 🥰❤
This looks similar to the Milk Tart (Melktert)that we have in South Africa. Before baking, we sprinkle the top with cinnamon. I would like to try your version -- it seems to be much easier!
English custards are just egg and milk. No thickening. They have nutmeg on top. I like little custard tarts but others I know just think they are disgusting.

That was clever to paint the top with egg yolk, so it wouldn't look pale and flabby and unappetizing. I may use that trick on various things.

do you apply the egg yolk after the mixture has cooled a bit or just put on top of hot mixture and let the oven do the rest?
You can spread brown sugar on top,it gives the same result...I think that most Greeks are spreading sugar on top...I do so...😊
