The Edgy Veg sent me! I _love_ vegan baking, and am really inspired to really step up my icing skills thanks to this video! I had never considered making my own icing sugar before (I know, even saying that sounds weird), but not only does it seem easy to do, but I much prefer the fluffy texture to that of the store bought, ready-made icing sugar! I have to get a good mixer, a cake twirly thingy, an icing spatula, and some piping accessories, but I'm going to make a go of it!

Earth Balance has a soy free version of their butter and I'm sure there are others as well. You could also look up some recipes for how to make your own vegan butter. You can't go wrong with all natural home made :)
Thank you so much! Temperature of the icing does make a difference. You want to keep the icing at room temperature at all times. If you notice your icing is too soft, try lowering the water content. :)

To do the ombre make vanilla buttercream and dye 1/3 of it your darkest colour once done piping on the first row, add 1/3 of the white buttercream to the dark coloured buttercream to make a medium colour. pipe your second row. Once done, add you final 1/3 of white buttercream to your medium colour to make your final row. ombre! :)
Yes, you can always try making your own vegan butter from scratch that is a little more health friendly. But it's hard to go super healthy with icing :(

Congratulations Aryane!!! I'm so happy you are going to use this recipe for your wedding cake! You could decorate the cake the night before. Unfortunately I wouldn't recommend doing it any farther in advance because it might dry out a bit. However, you can bake the cake weeks before and have them in the freezer ready to go, and make the icing two days in advance to save on time.
