My Father and I did this 22+ years ago. It was a great learning experience. We laid the blocks ourselves it was a crazy thing at first until we figured it out. I'm sure like the rest of the things you build it going to be fantastic.
My dad always said to save yourself some trouble and always make it...Level...plumb... and square. The carpenters rule/trio. The homes he built 50 years ago...are still standing...and looking good. Solid. Like you...he didn't cut corners and go cheap where quality counted. Especially the foundation. The code for residential housing was 1/2" rebar back then...he always went 5/8 in the foundation. He always said that was the strength of any house 🏠. Probably why his stuff is still standing straight and no sagging for the long haul.

I took vocational ed in high School and Bricklaying I use to know how to do that kind of stuff, Its all just a distant memory now almost 50 years later .

What a great dude. I would have been so mad, digging that by hand.... that no one would fancy hanging around to film it. Not that I'm lazy, but digging into the ground just drive me crazy. We normaly dig it out (with a machine) and build a frame of "scrap" wood. Then backfill in the end. (If that make sense... best way I can discribe it with my norwenglish).
