I like the sound of this method - I'll often make them without the soda and basically have a minty daiquiri - but the addition of the sugar cube and the muddled lime really kinda sounds like the best kind of marriage between a caipirinha and a mojito. Shall try this next time I make a mojito!
I muddle the mint and lime into two tablespoons of confectionery sugar, which mixes with the mint oils and lime juice to make this fantastic flavorful sugar slurry to mix the rum and seltzer into

I sometimes use cordials instead of simple syrup because I want the flavor without the pieces. Zest and add to sugar, juice the citrus, heat to dissolve, then fine strain. Gives it a bold color too.

Please, dont muddle the mint. In 2-5 minutos you will see the leaves change color and you extract oils that you don’t want from it. The original recipe is that you take 4 lime wedges, pulp side up, the sugar and then you muddle it in the glass, since is a built drink. You throw in the mint, fill it with ice, add the white rum ( Havana club or Bacardi ) mix it with the barspoon, and the barspoon is going to hit the leaves, extracting the flavor and aroma that you need for this cocktail and not making the leaves turn brown in minutes and extracting unwanted oils from the mint. Then top it off with ice and sod, garnish it with mint and a lime wedge.
Before weighing in with an opinion maybe try my way so you can have an informed one. Better yet try both side by side and see. Nobody is “muddling” the mint, I use a muddler and lightly press the mint to release the oils. Just because something is done one away traditionally doesn’t mean that’s the best way to do it

You have two oz of rum, half an oz of syrup, the juice of a whole lime and you shake it with some ice for dilution, so i guess even without ice its about 4 to 5 oz total. Plenty of liquid even before the ice melts, so just drink it as it is :) cheers
A drink like this would usually get a straw so you can drink it around the ice. That much ice is great though! Any less and the drink would be less cold and the ice would melt quickly and make the drink gross and watery. More ice keeps the ice from melting as fast.
I like the technique of building, but I refuse to keep all that "garbage" in the cocktail. After the muddle and shake, all the flavors are in the cocktail.. keeping in the drink adds nothing, and drastically lowers the appearance as well as the drinking experience (constantly getting stuck in the straw or stuck in the drinkers mouth)

After this video I did a mix between this and the more traditional method and my wife said it was the best mojito shes ever had. But the second time I couldnt exactly remember what I did and it was one of the worst ones she's ever had. 😂
the comments are interesting and suggest this is not a Mojito! Assuming the cocktail was invented in Cuba maybe 200 years ago Soda and Ice might have been tricky to get hold of! I think most of us would add ice now, I do often add a little soda once I have topped up with ice but never more than 30ml, assuming I used 60ml of rum. In reality most rum, lime sugar drinks started as the 'ti punch' and evolved slightly on different islands.
I like this method but I've made some slight changes in how I make my mojito. For the virgin, instead of topping with cranberry juice I rather use red grapes juice and it makes it look awesome
Just follow the receipt have some respect for the Hispanic guy who created this cocktail, build it in a Collins glass add the soda water as supposed to be. If you wanna do this method fine but stop saying it's a mojito (very offensive) I know you all English men proud of your Amaretto sour, Whisky sour and Gin fizz, go head and feel free to call this one Rum sour...
Nobody knows who even created the mojito or how it was originally made. Among the contenders are the non Hispanic taino people and even sir francis drake, but the cocktail is evidently very old and has gone through many iterations. Even in Cuba, there are stark differences in how neighbouring bars make the drink.
Wish I was allowed to use that much mint when making mojitos... we're only allowed to use 4 leaves tops as decoration. No actual mint gets into the drink. Because my boss thinks it's a waste and too expensive 😅

This is it! I substituted the simple syrup with agave syrup and it gave it an exotic flavor like what the resorts do!

I use half an ounce of triple sec or Cointreau in my Mojito. It adds a world of difference 🔥😫 it brightens up and aromatizes the drink so beautifully
