Today we are learning about the most traditional and greatest of all foods of Aotearoa (New Zealand), a Māori hangi, which is an underground oven that’s been used in New Zealand for over 1000 years.
We’re meeting up with Rewi, better known as the Hangi Master ( hangimaster.co... ), who has dedicated his life to perfecting hangi cooking, and preserving his Māori cultural heritage. Again, in the words of Rewi, “you haven’t been to Aotearoa until you’ve eaten indigenous food”, and I agree. There’s nothing better than a hangi in New Zealand!
First, we went to harvest some local herbs and plants from the forest - both for cooking and for flavoring. On the menu we had chicken, lamb, pork, and mutton birds - a unique delicacy. What I loved is that Rewi seasoned everything the Māori way, using saltwater to soak the meats, and seasoning with a spicy leaf and seaweed. The hangi cooked for just about an hour and a half, and in the meantime, we devoured a fish cooked in the coals.
The basket of food came out smoldering hot, everything cooked until fall apart tender. The flavors were smokey and steamed all at the same time. And I loved how everything retained its flavor without getting dried out.
The food was amazing, and the hospitality of Rewi and his knowledge of Māori food and ingredients was a highlight.

Micah has to be the most seasoned world traveler, EVER. By the time this kid becomes a teenager, he'll be a master Chen and food expert! Micah will remember and cherish all these experiences his parents spent with him. I think it's cool that Mr. Wiens takes his family with him on almost every trip he takes. Family is everything!

"Only an hour and a half." "This is a small basket." 😳 I love to hear that haha! I loved seeing Micah so happy to help carry the plants/herbs and then excited to help with the shoveling. You can tell Rewi loved having Micah helping out as well. It was so cool to see him chatting with Micah in the background and laughing when Micah exclaimed "Oh nooo!". Rewi would be an awesome uncle.

@Aaron-wh7vg nothing in a hāngi is traditional to us. All ingridients came from the Brits except the kūmara and tī pore (cabbage tree) and even people. we we're savages before colonialism and kinda left those savage tendencies in the past 😂😂
You could not have asked for a better host than Rewi to share an insight of our cooking methods and natural herbs. His knowledge and restorative skills in all things Maori is reknown vast and wide. This video was such a pleasure to watch. Thankyou Mark for sharing, your the best.
Im south african born but raised in New Zealand now living in Australia, I cant tell you how much i miss this beautiful country. The Maori people are so welcoming and full of love towards everyone, the food especially the hungi is one of my favourite foods on the planet and i miss having it every weekend.

As a caucasian nz'r I can say honestly with no bias that a good Hangi is amongst the best food you can taste... every flavour intertwines with everything else because the vapour cannot escape. ......and the smokieness is just right. It's a flavour you can not describe.....only experience. it's next level.

I have to confess I had a terible hangi when I was in school and it ruined my impression of it for decades. This video really highlighted that it can be much better than what I was fed in school. Some parts look good but some I still would need to taste to confirm.
Maori cuisine is garbage, reflection by how primitive they were and are. Hangi literally taste like dirt and their beloved boil up is just a really bad soup.

I watched the first episode where mark tried some food in auckland and i was saying, “this guy needs a hangi” but a real one. And well here it is! This was a treat to see, the hangi master was a great host Mauri Ora!

Here in Chiloé Island, Patagonia, Chile, the indigenuos nations also cook with a very similar method and a combination of surf and turf as well. We call it ¨Curanto¨. Ancient Polinesian navigators influence? Most likely. Great show!
I’m Māori and I have been to Peru and had their “pachamanca” style underground cooking and I thought it was way better than a hāngi. All the herbs and spices and it’s cooked hotter and quicker than the hāngis I’m used to so the pork skin had a nice crackling to it. But I will say, this is probably the best looking hāngi I’ve ever seen. Especially with all the plants and herbs. no aluminium foil

@@genghis4789 nah that’s just what I think. We have a potato here called the peruperu that was here pre European. I’m guessing it’s named after the place of its origin (Peru). I think the Polynesian ancestors of Māori have roots from both Asia and South America

One of my favourite videos in a while. Love seeing Micah smiling in the background while he helped out lol it had a sense of adventure not just "travelling" and such an amazing host both knowledgeable and humble.
Almost everyone wants to be like Mark Weins! Traveling around the world, eating delicious foods and experiencing new cultures. And also he can eat the local foods like a local and that is really impressive. For example, We have mohinga which is fish soup broth, def not for everyone. But I know he can eat it like a true local. Trying hard to be like him one day! Inspiring from every angle.

I've been watching your channel since the beginning and it's so nice to see you in my country. I don't know how you managed to get our countrywide hangi master to give you his valuable time. He is a legend and a wealth of knowledge about the history of food and how it's developed over time. It's so neat that all cultures have this same cooking technique no matter the protein or condiments (and using local fauna.) I assume it came to be out of experience and efficiency of an "oven." It looks amazing! I would have this over any white tablecloth restaurant food. Loved it!
The Māori are amazing! I love their rich traditions, connection to nature, and vibrant culture, especially their Hāngī cooking method, where food like meat and sweet potatoes is cooked underground with heated stones for a smoky, earthy flavor. Great Job Mark's !!

when i saw you went to nz, I thought that going to a tip top pie shop was excellent, but hoping you would do the hangi (maori language). It's great. The wrapping of the leaves. You have so many spices in Thailand you have probably seen it all, but the niceness of mark made this one more compelling. That hangi looks delicious. My Uncle and Aunty live in Te Hauke just south of Hastings New Zealand and one of the highlights of my childhood was having family gatherings where everyone showed up there from around the country and a Hangi was prepared, I am pure Pakeha / Europian decent but my Aunty Married the most incredible Maori man, My Uncle Richard, who sadly passed away 2 years ago.He was a man who came from very humble beginnings but provided an incredible life for his family and extended family
